**What You Need**
St. Louis Cut Spare RIbs
A Savory Rub (Mississippi Grind)
A Spicy Rub (Gulf Coast Smoke Southern Hospitality Hot)
Mike's Hot Honey
Your Favorite Vinegar Sauce
First Things first... Get your pit fired up. Set it up for indirect cooking. We are wanting to keep the temps between 275-300. Run a good clean fire and control that temp.
These ribs did not need much trimming and the membrane was already removed. We got a good layer of "The Grind" followed by the spicy Southern Hospitality Hot Rub. These rubs paired great together and had a great color.
Once the pit was stabilized and running 275-300, we got the ribs on. We watched a thin blue smoke roll from the SnS Kettle and I was amazed how well it ran and held temp.
Once we got the color we were looking for, we wrapped the ribs in foil with a little Vinegar sauce. After a total cook time of 4 hours 15 minutes, these ribs were good and tender.
We glazed these ribs with Mike's Hot Honey and a little more Vinegar sauce. They had a great flavor and definitely brought the heat!!!
