We love shrimp. As Bubba said in Forrest Gump, there are a boatload of different ways to prepare it. Shrimp is absolutely delicious, and super easy to prepare. This style of shrimp is was made popular at Bonefish Grill and is usually called Bang Bang, Boom Boom, or Firecracker Shrimp at different restaurants. Today, we are giving you our spin on Firecracker Shrimp that may be better than the original, and a whole lot easier on your bank account too!

Ingredients:
1 to 1 1/2lb large peeled and deveined shrimp (we used Royal Reds)
1/2 cup mayo
1/4 cup sweet thai chili sauce
Sriracha to taste
1.5-2 cups corn starch
1 - 2 cups Buttermilk (enough to cover shrimp)
Canola Oil for frying
Directions:
1. Soak shrimp in buttermilk for 20-30 minutes.
2. While your shrimp are soaking, prepare your corn starch by placing it in a bowl or pan.
3. Mix Sauce up by mixing together 1/2 cup of mayo, 1/4 cup sweet chili sauce and Sriracha to taste.
4. Taste and adjust spice level by tweaking the amount of sriracha vs sweet chili you decide to use.
5. Remove shrimp from buttermilk and let drain.
6. Place shrimp into cornstarch and evenly coat.
7. Prepare canola oil for frying with about 1/2 inch of oil in pan and get temperature to 325-350 degrees.
8. Carefully place your shrimp into the oil and cook for 1.5-2 minutes, or until brading is a nice brown color.
9. Once the shrimp are cooked through, remove them to a bowl, add sauce and coat and enjoy.
