I just stir fry them, frying the stalks first, then adding the leaves. Normally I add fresh shrimps (little ones) or dried anchovies. The young sweet potato leaves (top young growth) are very good for salad. Sweet potato leaves are high of iron and fiber. Also, good for lactating woman. When I was a kid my father used to have sweet potato farm. When we harvest the sweet potato, we don't remove all the vines, we let it grow for a year ( but that's from tropical country, but I guess in US you can't do that due to the cold weather ). We only dig and remove the bigger sweet potato then we leave the small one to further grow.

Other sites on KZitem said you need 85° in a greenhouse or direct sun covered with a blanket making sure the humidity is high and the heat is high and then to store them and wrap each individual one into newspaper and then the temperature have to be down as low as 50 or 60. That all seems like a bunch of unattainable process in the north west. I think I’m going to buy a bunch of them and dehydrate them and let the people in the south grow them

Your soil looks very lose and dry. Did you add a lot of peat moss to the bed? If it is a new bed it takes a year or so to get the soil right and you might need to water more. In years that were dry and I didn't water enough the potatoes were small. I love watching potatoes being harvested.
@twocountryhome3529

Our beds are a few years old we just keep adding organic matter to top them off every six months or so. And yes with temps near 100 daily our soil does dry out regularly and I water as needed but we try not to "baby" the plants with too much water we may do better if we did also we end watering 2 weeks before digging as it makes the harvest and storage better.
@carolparrish194

@@twocountryhome3529 You might try planting them in long hills covered with black plastic pinned down. Put a soaker hose under the plastic. The plastic will help to keep the soil moist. That is the way I plant mine with success. You didn't say what critters you are trying to keep off of your plants. We don't use a garden fork or shovel for risk of hitting a potato and damaging it and then it doesn't store well we find with our loose soil that our hands work the best for this small area and it is also a stress reliever to dig in the soil.
