Hey Major Catching up on the Vids been in Tulsa since last weds. just got back today , My wife loves the Blackberry on ice. A friend bought over Hibike one night smelled like peanuts and tasted horrible I threw it down the drain, I did win a Old Overholt 114 from Sean but have night opened it yet also picked up a Murray Hill in Tulsa ... The reason you feel that way about Japanease Whiskey is, legend has is Suntory studied under Islay Masters for 20 years because he was obsessed with peated scotch. After his training he went back to Japan (historically simple pallets and profiles, Rice, fish, etc) and released a peated scotch thinking they were going to love it. They absolutely hated it, devistated he created Toki to troll the Japanease people, pear, apple, oak, very simple flavors, and of course they LOVED it. Legend has it that's what built Suntory and years later he was slowly able to bring Japanease people to the dark side with various iterations or single barrels of certain offerings with smoke and peat. But after the Toki craze others began distilling whiskey similar to Toki. That's why you have all these blends like Hibiki, Kaiyo etc very similar profiles that remind you of Scotch, with 0 bourbon characteristics, that focus on fruit, or so the legend goes 🙏🏾

@MajorXero This is a very inaccurate account of the history of Japanese whisky and is muddled by bad folklore, cultural misappropriation, and rumor milling. The Japanese people have been painstakingly crafting whisky since 1890. It was originally made with rice in Peoria, Illinois by Jokichi Takamine and tasted like older bourbons, but the American whiskey market saw him as a threat to their industry because it was cheaper to produce, and his business was destroyed in a "mysterious fire." Some Japanese whiskies taste similar to scotch because of Masataka Taketsuru who took on apprenticeships for distilling in Speyside, Lowlands, and Campbeltown from 1919-1920. In 1923, Yamazaki distillery was built, and an inexperienced Taketsuru worked for (now called) Suntory owner Shinjiro Torii to produce whiskey. In 1929, the first Suntory whisky "Shirofuda" was released and tasted almost entirely like peat, lacking subtlety and expertise, so it didn't do well with the people of Japan. After years of disagreements between Taketsuru and Torii about the influence of Scottish tradition on Japanese whisky, Masataka left in 1934 to start Nikka distillery, arguably the largest producer of scotch-like whiskies in Japan today. In 1937, Shinjiro Torii became the master blender for Suntory and released Suntory "Kakubin," which had more bourbon focused notes like baking spice with honey and a light florality, and became an instant hit and a cultural icon for Japan. Japanese culture is about building off of strong cultural values with the interest of their own population in mind, and their whisky is no different. Kaiyo is actually from Hong Kong, and has absolutely nothing to do with Japan. Eventually, Japan started to enjoy the flavors of scotch thanks to the success of Nikka as Taketsuru's skills grew, and Suntory eventually purchased brands like Ardmore, Auchentoshan, Bowmore, Glen Garioch, and Laphroaig. In 1985, Nikka began blending their whiskies to innovate new products like Nikka From the Barrel that evoked bourbon-like sweetness with strong scotch flavors. Suntory responded by creating Hibiki in 1989 and didn't create Toki until 2016, which was ONLY released for the North American market as a response to the US's explosive interest in Japanese whisky in the 2000s & 2010s. Japan has shown a very large interest in bourbon for a number of years (Kirin purchased Four Roses in 2002, and they love Jack Daniels + Blanton's over there) and their products are starting to show it more. In 2017, rice "Koji" whiskies hit the market, which taste like old bourbons from the 70s similar to Old Taylor, but aged at a minor fraction of the time needed (they are absolutely delicious!) There's an entire range of different styles of Japanese whisky and flavor profiles that taste absolutely nothing like scotch and closer to bourbon. If you're looking for a Japanese product to satisfy your palate for both bourbon & scotch, I highly recommend that you try Nikka Coffey Grain, because it will change your mind. It has a mashbill made mostly of corn and tastes more like American whiskey than it does Scottish. Whilst I'm sure you know this already, just in case, Japanese Whiskey tastes like Scotch because the people who started the whole movement went to Scotland and worked under them to learn how to do it. When they took it back to Japan, they weren't selling very much and realized that it was because Japanese People tend to have a milder palate, so they "dumbed it down" a bit. 🐱💙🙏🏻👊🏻🌚
