You should really really consider taking everything out of the interior, because there might still be some poop under the seats/dash/carpet, or behind trim/covers/everywhere still.

Check for broken head studs when you pull the valve covers, and yes you can do it without pulling the motor. You shouldn’t even need to pull the exhaust; it’s a routine service area i.e.: valve lash adjustment. As far as head studs, if you pull a lower cover and some random nut falls out or is sitting in there, that’s what it is. People tend to freak out about it, I don’t really. I’ve known cars to run with a broken stud or two for years without any problems. It was more of an issue on the mag case motors, which this car would have originally had, but I remember you suspected this one may have been replaced which wouldn’t be a bad thing. Regardless, get ‘er up and running and enjoy. Can’t do much better than an air cooled 911 as far as available info and resources go.

I’m not sure you can be a “car guy” and not dream of finding your dream car hidden in some dank and dusty corner of a barn, unloved and undriven for longer than a car deserves. However, having recently started rebuilding my 23 year old daily driver, I’ve realized the truth of the labor and money that must be overcome by our love of the car! These videos confirm it for me. I’m not sure I long to discover some hidden treasure long forgotten… now I dream of my dream car hermetically sealed in a large vacuum bag, protected and undriven. I seriously appreciate you and your videos, and not just because I get to vicariously experience the joy of building cars! I appreciate how you include clips of your kids and how you’re real about life and the struggles of doing what you love! Thank you for allowing us to come along your adventure!

Pelican parts sells a complete kit for $690 and there are discount codes floating around for them that will get you at least 10% off. After all that cleaning I would still shine a black light all of the car. Rat urine fluorescence under UV light and you can see every where they have peed in that car.
