An easy and tasty fish pie.
serves 4-6
Filling
1 tablespoon butter or margarine
1 Onion, finely chopped
4 garlic cloves
2 carrots grated
2 boiled potatoes
3 boiled eggs
1/2 githeyo mirus
1/2 teaspoon pepper
1 can tuna (1 big or 2 small)
2 chopped tomatoes
2 tablespoons soy sauce
3 tablespoons ketchup
Salt to taste
Oil
1. Heat oil in a frying pan , and add onion and sauté till it becomes translucent and slightly brown. Then add carrots, scotch bonnet or chillies and fry till the carrots become soft.
2. Stir in the tuna, potato, eggs, tomatoes, soy sauce, ketchup and stir fry till everything is mixed well. Season with salt and pepper and switch off. Let it cool.
For pastry
2 cups flour
3 tablespoons butter or margarine
1/4 cup cold water (or appropriate to dough)
Salt to taste
1 egg white
Add butter or margarine to flour with salt and mix with fingers until the butter and flour looks crumbly. Add cold water and mix till everything comes together and form a ball but no need to make it into a smooth ball.
Preheat the oven to about 200 to 220 degree celsius. Grease or line tray with a baking paper
Divide your pastry into two and roll out the first one with a rolling pin on a lightly floured surface. Place it on the baking tray. Prick the base several times with a fork.
Spread the fish filling on top of the pastry
Roll out the second pastry and lay it out on top of the fish filling.Trim off any excess pastry or press around the edges to seal.Pierce a couple more holes with fork.
Brush the pie with egg white.
Pop in the oven and bake for 40-45 minutes till golden brown.
