It's awesome that you're trying to make sourdough. I can consistently make great loaves now and I would completely change every aspect of what you did. There wasn't a single method you used that I do. But I am going to save you a massive amount of time. The Sourdough Journey on youtube is amazing, and his website has perfect guides for you to bake amazing bread. My first ever attempt came out magazine cover perfect by using his advice. Then i went on to overproof a few times because I was trying to rush the process by increasing dough temperature. The dough would end up over proofing in the fridge overnight. It took until my 5th or 6th bake before i was consistent, all thanks to sourdough journey. People like The Bread Code are just okay, theres a bunch of decent sourdough people. I've been through them all, if you give The Sourdough Journey a chance, you'll see why you won't need anyone else ever again

Hi! Good first try! Yes I think your starter is not developed enough yet. Also try an hydration of about 70% to start out, meaning using 350g of water instead of the 405 you used. The dough should keep its shape a bit better and you'll still get a nice open crumb. I would also suggest looking at "The bread code" 30min masterclass video, it really helps you understand everything going on in the dough. Today afer baking about 15 loaves of bread, I finally got it to open really nicely and rise great. So from one beginner to another, good luck!
