Another good example of "can't help" is from an Elvis Presley's song: "But I can't help falling in love with you " :) And a grammar rule: "can't help" is always followed by ING verbs (gerunds), like here we have "fall(ING)"

Both are fine, but refer to different times. "You shouldn't have to do that" is present, and "You shouldn't have done that" is past. (the person did something, and you're scolding them)

It's a small difference. Might we use when something we know in about 20%, but may is a some kind of let and this is in 50% . I don't know if you understand me, I'm polish :)
