It's so easy to get carried away and eat more than 2 or 3. They are that good.
For the amazing dough or outer shell:
You will need:
415 g all purpose flour
1 tsp sugar
1 1/2 tsp salt
1 tsp baking powder
10 tbsp very cold unsalted butter
1/4 cup sweet chopped onion
2 small shallots finely chopped
3 large cloves of garlic smashed and chopped finely
1 medium jalapeno finely chopped
1 orange bell pepper
1 red bell pepper
1 tbsp tomato paste
salt and pepper to taste
a mix of cumin, coriander, paprika cayenne thyme oregano, garlic powder. 1/2 tsp of each
for the avocado dip:

Preparation:
For the meat blend:
Cook 2 pounds of chuck over medium to high heat, when it's mostly cooked i add the onion and garlic. Cook for 2 minutes before you add the peppers. Mix the whole thing and add the spice mix then 1 tbsp tomato paste. Add salt and pepper to taste. Cook for 5 more minutes or until most of the liquid disappear. Drain using the strainer and set aside.
Note*
You will only need half of the meat mixture amount, and i'm freezing the rest.
For the dough:
You're going to mix the flour with the salt, sugar, baking powder.
Grate 10 tbsp cold butter on top of the flour.
Mix it in gently for 1 minute, then add between 6-8 tbsp of cold water gradually. You don't want the dough to be very soft.
You can work on the dough immediately or refrigerate.
Roll the dough and cut a 4 inch circles and you can absolutely use the scraps.
Fill each circle with a generous amount of meat mixture or mozzarella or both. Close tight just like shown in the video and fry at 350°f for 1-2 minutes.
