Flavorful Salmon Quinoa Salad
Ingredients:
• Salmon, cut into bite-sized pieces
• Salt and pepper, to taste
• Olive oil
• Quinoa
• Cherry tomatoes, cut in half
• Avocado, sliced
• Mango chunks
• Arugula
• Balsamic glaze
Sauce:
• Yellow mustard
• Honey
• Salt and pepper
• Olive oil
Instructions:
1. Prep the Salmon: Cut salmon into bite-sized pieces and season with salt, pepper, and olive oil.
2. Cook the Quinoa: Prepare according to package instructions.
3. Make the Sauce: Mix together yellow mustard, honey, salt, pepper, and olive oil.
4. Pan-Fry the Salmon: Heat oil in a pan and cook the salmon until fully done. Remove and set aside.
5. Prep the Veggies: Cut cherry tomatoes and slice avocado.
6. Assemble the Salad: In a large salad bowl, combine arugula, cherry tomatoes, avocado, mango chunks, cooked salmon, and quinoa. Drizzle with the prepared sauce and top with balsamic glaze.
