• Ingredients: butter cream

• Heat the sugar, the water and the salt with low heat till it gets 115 degrees. Crack the egg and blend it, then slowly add the sugar water in it. Quickly blend it to be sticky and it cools down to about 30 degrees, then add the 150 grams of butter in it and blend it to be cream-like.

Eggs 8(each about 60 grams) 3:08,
White granular sugar 200 grams 3:24,
Milk 60 grams(or any kind of juice) 3:29,
SP cake emulsifier 15 grams 3:34,
200 grams of all-purpose flour or low-protein flour, 4:23,
Oil 60 grams 4:39,
The baking tray is 32 cm long and 28 cm wide, any tray of the similar size will be fine.
• Baking temperature for an 80-liter oven: preheat the oven to 160 degrees for top heat and bottom heat, keep it on the lower rack and bake for 35mins to 40 mins. Take it out when it looks about right. A smaller oven usually provide more heat, please reduce the temperature by 5 degrees for every 10-liter reduction in oven capacity.
