These are not just any pork ribs. These are Tuscan Spare Ribs: spicy, garlicky with fresh herbs and tomato. These ribs take a while but are well worth the effort.

Recipe:
TUSCAN SPARE RIBS
Prep Time: 30 mins
Rest Time: 8 hours
Cook Time: 1 hr 40min
Total Time: 10 hrs 10 mins
Servings: 6
INGREDIENTS
3 lbs pork spareribs
Rub:
2 garlic cloves, minced
2 tbsp rosemary, chopped
2 tbsp sage leaves, chopped
1 tbsp salt
2 tsp black pepper
2 tsp red pepper flakes (or to taste)
1 tbsp extra virgin olive oil
Sauce:
2 cups canned diced tomatoes
2 tsp Worcestershire sauce
1 garlic clove, sliced
1 tsp red pepper flake
2 tsp hot sauce (optional)
½ cup dry white wine
DIRECTIONS
1. Trim the ribs so that all of the ribs can be cut into individual portions when cooked.
2. Remove the membrane on the bone side of the rack and trim the skirt.
Rub:
3. In a food processor combine garlic, rosemary, sage, salt, black pepper, red pepper flake, and olive oil. Blitz until coarsely chopped
4. Rub the ribs with the garlic mixture, cover in a roaster and refrigerate for at least 8 hours, up to 48.
5. Preheat your BBQ grill on high.
6. Grill the ribs for about 15-20 minutes to put some good brown colour on the ribs and boost the flavour.
Sauce:
7. To a mixing bowl add tomatoes, sliced garlic, crushed red pepper, Worcestershire sauce, hot sauce, and wine.
8. Cover the pan with foil and braise the ribs for 70 minutes. Remove the foil and roast an additional 20 minutes. Serve immediately.
