from the infamous Mennonite "More With Less" cookbook. A simple, but delicious, recipe. Preheat oven to 375, combine in shallow 9x13 baking dish the following: 1 3/4 c rinsed lentils, 2 c water, 1 whole bay leaf, 1 tsp salt (original calls for 2 tsp but we use half), 1/4 tsp pepper, 1/8 t. each of marjoram, sage, thyme; 2 large chopped onions, 2 cloves minced garlic, and 2 c canned tomatoes. Cover tightly and bake for 30 minutes. Remove from oven and stir in 2 large carrots thinly sliced and 1/2 c chopped celery. Bake uncovered for 40 minutes until vegetables are tender. Optionally stir in 1 chopped green pepper and 2 Tbl chopped parsley (we never do this optional step). Sprinkle on top 3 c of shredded cheddar cheese and bake uncovered for 5 minutes. Delicious. This is a lentil recipe I have used and like. Lentils and Rice 3 T olive oil 1 onion, chopped 1 T curry powder 1/4 t red pepper 2 t salt 1 t oregano 1 t basil 1/4 t turmeric 2 t garlic 3 1/2 cups water 1 cup lentils 1 cup rice Heat oil in pan and sauté onions, add spices and cook for a few minutes - smells wonderful - Add water and cup of cleaned and rinsed lentils. Cover and cook 15 minutes. Add rice, stir well, turn burner to low and allow to simmer covered for 20 minutes. Turn the burner off and let set for a few minutes. This is a good basic recipe. You can change the spices to fit your personal tastes. Adding raisins and almonds enhances this curry dish even more.

I LOVE lentils!!!! They are quick to cook and so versatile. Here are some of my favorite uses for lentils. Please remember to rinse the lentils (or any dry beans) before cooking to help remove the dust that accumulates in the processing facility. 1. Cook and drain lentils, add your favorite red spaghetti sauce till it is the consistency you like and serve with pasta. 2. If you do not like red spaghetti sauce, top the cooked, drained lentils with some basil pesto and serve with pasta or another starch (I like quinoa). 3. Use cooked, drained lentils in sloppy joes and as the base for Shepherds Pie. 4. Add cooked, drained and cooled lentils to cucumber and tomato salad (or any salad). This is a summer lunch staple in our house. 5. Cooked, drained and mashed lentils mixed with some finely chopped onion are the basis for some great patties or "neat balls" (depending on how you shape them). Most recipes add some grain and a binding agent like and egg or an egg free replacement and then saute or fry the patties in oil. You can vary the seasoning to make the flavor be Italian, Middle Eastern or Mexican, Indian, Asian... 6. An old favorite from my former vegetarian days was lentil nut loaf. Cooked mashed lentils are mixed with ground nuts, a binding agent like those used to make patties and seasonings similar to meatloaf. This is baked in a loaf pan and the cooled leftovers make great sandwiches. 7. There are many soups and curries that use lentils. Here is a quick favorite: 2.5 cups water or stock, 1 cup red lentils, 1 stalk diced celery and 2 diced carrots, 1 bay leaf, 1 teaspoon dried thyme, 1 teaspoon salt and 0.5 teaspoons ground pepper. Bring to a boil then simmer for about 15 to 20 minutes till the lentils have mostly fallen apart REMEMBER: To provide the complementary amino acids to "complete" the quality of the protein in lentils (or other beans) be sure to consume a grain OR small amounts of a complete protein from an animal source at some point during the day. Years ago it was thought that grains and legumes had to be consumed at the same time, but later research proved that level of timing was not critical. It was also thought that the proportions of legumes to grains or other protein sources was critical and people went to great lengths to balance the amino acid profile of specific legumes with seeds, nuts, grains and/or dairy to create a perfect profile to match the standard (egg protein), but again, later research found that this level of attention to detail was not needed as long as the other food components are eaten at some point during the day. Soak the green lentils over night. Rince them in cold water. Mix, and add 1 egg and breadcrumbs. Salt and pepper. Make patties and fry in a pan. With a little squeece of lemom, they taste like fish.

Whole lentils can also be grown into microgreens or sprouts, so you can get a fresh, highly nutritious vegetable in a few days from a compact, long term storage food. Lentils with mushrooms make a nice pâté.

Not a lentil recipe expert here, but my nearby young adult nieces & nephews are plotting to figure out how to put lentils into meals for “Meatless Mondays”** in September, and I get to come along to try them out. ** Meatless Mondays is something their church is doing where parishioners take the money they didn’t spend on including meat in meals during the month and donate it to the local food bank.

My favorite is black beluga lentils. I toast them in olive oil then add water and a overflowing handful of fresh garlic cloves then cook until lentils are done, salt to taste and i eat it warm.

@janh1399 - Yeah. We love it. Dice onion, garlic and carrots fine, saute in a little oil until the onions are translucent and starting to get a little color. Add 1 can diced tomatoes ( I use fresh when possible) and 1 1/2 cup red lentils. Stir. Add 1 can crushed tomatoes or tomato puree. Add 1 cup water. Add whatever spices you like, stir and cook until lentils are done. About 20 minutes. Stir every 5 and add more water as necessary. I used this in lasagna the other day. Huge hit. We enjoyed this more than a meat sauce. However my family is also looking forward to cooler weather and meatballs.

Lentils, yes. The higher nutrient dense food. We don’t do beans. We eat a whole food nutrient dense diet. These are a great stretcher… I dont want to eat them alone but to stretch meat and add in dishes. I also love Indian food.

The family loves them. But, one day, 'I" wanted a pot of good old fashion lima bean and ham soup. Our youngest son walked up to the pot, looked in it..( I can hardly type for 🤣🤣)He asked, WHAT HAS HAPPENED? Did you lose your job? And he was serious, ARE WE POOR? I was a little perplexed as to why he was so upset, and what he was talking about, and I asked..SON- what in the world gave you that idea? 😂😂 He said, there is only ONE bean in this pot..I ran over to look and see what happened, did I overcook them and they turned to moosh? No, there were plenty of beans. Again- son, there are beans in the pot...And he said...IF we are not POOR, where are the rest of the beans? 🤣🤣He honestly thought, that we were wealthy because we had 15 different kinds of beans cooked in the pot, and we suddenly became poor because there was only one( type) of bean in the pot 🤣🤣After I stopped laughing so hard, that I could explain..he said, well now I feel dumb. 🤣🤣

The wraps turn put better if you only soak the lentils and then grind them into a batter and prepare them like pancakes. You can also add some rice or other grains like millets to the soaking lentils. Onion, garlic or other spices and vegetables also work well. The red lentils are actual hulled lentils and have lost some of their mineral and vitamin content, but they cooked the fastest and are great as a soup or in stews. The black Beluga lentils have the highest amount of antioxident and are great for lentil salads. For many people the speckled green lentils are the tastiest ones and they made it into fine dining. The Indian and Middle Eastern kitchens have great recipies for lentils. Just browse a bit here on KZitem.

love this and love, love, love lentils. Fun bit of trivia, according to tradition the stew that Esav (your scriptures I think translate it as Esau) traded his birthright for was lentil stew, and that's what Yaakov made for him when they met up when he came back all those years later. They have been around that long. If you can't get to a winco, go to an indian/asian market. they regularly have bulk bags of the red lentils. What's pictured here are masoor dal (split red lentils). If you look and get the football lentils they won't look the same because they still have the brown outer skin and aren''t split but are sproutable (and thus growable in a long term situation). QOTD: I have different favorites for all of the varieties. but my favorite for the regular lentils you got in the 25# bag are to cook them with just a bit of salt pepper and then to serve over rice. The key with this recipe is to hit it with a dash of (preferably flavored) vinegar. It really brightens up the dish and rounds out the flavor profile. ps I'm super jealous of your easy source of beluga (black) lentils. I have to special order them from amazon and last I looked they were EXPENSIVE. I've been substituting black mapte beans (a variety of mung bean native to northern india) from the asian market. similar cook time, but the flavor profile isn't as close as I would like.

Hi Guys. Love this video, cos lentils are GREAT. Several points to raise, starting with the comment posted by FunnyFarmDad. I don't know where he got his figures from...but they are WRONG!! I use Red Split Lentils, and an 80g portion of cooked lentils contains just 13.9g carbohydrate. This cooked portion comprises 30g lentils and water. So, far from being bad for diabetics (and yes I am one), lentils are EXCELLENT, since the carbs are mainly cellulose (indigestible to the human body) and soluble fibre, which is so good it's silly. The Diabetic Society UK, recommends 200g of carbs as a maximum so a portion of lentils (30g uncooked) is well inside that envelope. As for recipes, well I gave you my Prepper Pantry 3-bean curry, rice and flat bread recipe on a previous video, which leaves my Minestrone Soup and Quick Dumplings, but I'm loathe to part with it, having sworn I would take it to my grave... I'll think about it... maybe. Finally, you say in the video that they are easy to grow, do you know what type of climate they need, soil type etc? I live in the UK so...not too hot, not too cold, not too wet (despite allegations to the contrary!!), and not too dry. What do you think?? Take care and see you on the next video.

@@juliabrown5948 Morning Julia. Yes you do, they're so very usable, and really cheap (Tesco's do a 1kg bag for £2.50, but it's sometimes on offer for £2), which is 33 portions, so if you had one portion every day (it may come to that!!), 11kg will do a year.

most lentils these days come from western canada. so you might actually be a bit too warm and too wet for the common varieties, but like most things there are cultivars from all over the world adapted to different climatic conditions.

I am battling creeping higher blood sugar numbers. So no high carb foods for me. But i DO have a use for my buckets of bean, rice and lentils. I cook them up and give them to my chickens. The higher protein means more eggs.

I am still getting over being forced to eat my mothers lentil soup. I think the only way I could do it is if I was starving or I did not want to offend somebody. When I was a kd in the 60s, schools received a lot of lentils for school lunch program. Our cooks used them mainly as a meat stretcher in things like sloppy joes, meat loaf, soups, goulash, etc. Never had them at home as my dad was a cattle rancher and didn't suffer meatless meals willingly, but I ate the lentils at school and learned to enjoy meatless when prepared in tasty ways.

Surprised you make no mention of sprouting the brown (otherwise known as 'green') lentils. Unusual that you haven't done a little research. Like any sprouted grains, seeds or legumes, the nutrition is multiplied, and the antinutrients are reduced. Sprouts can be included fresh in salads or cooked in soups or even dehydrated for later use. Dehydrated sprouts can be ground or processed into powder to be added to bread recipes, pancakes or any other flour, adding nutritional, proteinic and vitaminic content.

I vacuum seal with a O2 absorber in pint canning jars. I use one pint for one person per month and have Red, Black, Green & Yellow in the Pantry. All are delicious and I mostly use in South Indian recipes or to thick soups & stews.

if you are referring to wet canning as opposed to dry canning, yes you can! just be advised they will be VERY done. very, very, very done. purree consistency. from dry to cooked I've never come across a lentil (And I've eaten all of them--been vegetarian for nearly 30 years now) that takes longer than 30 minutes with regular simmering. put it under pressure? I have done it, at least to finnish filling the canner (I hate wasting space lol) particularly for adding to soups when I'm in even more of a hurry. or for making as a dip (Similar to hummus).

Can beef, chicken, venison, bison, elk, fish, sardines. Canned meats last many years. They are a long term storage food. Fact is long term nearly every insulin dependent diabetic will die. Type 2 diabetics will actually get healthier because excess calorie consumption is the primary reason for it.

Agreed. I will only ever eat that crap if i am starving to death. Im serious. They are not that good for you. It is peasant food for sure. Grains are a net negative in the long run... My long term protein food supply are munching on grass in the pasture.
