O-M-G I have died and gone to loaded baked potato heaven...Ok, YES...YES, this is as good as it looks. Actually it's even BETTER!
Filled with cream cheese and cheddar cheese and scallions, baked to perfection with a mound of melted cheese sliding down like lava and topped with sour cream, scallions and a few dashes of your favorite hot sauce.
It's all that and then some!

INGREDIENTS:
6 Baking Potatoes
3 Cups Shredded Cheese (I used Sharp Cheddar)
8 oz softened Cream Cheese
1 TBSP- Lane's BBQ Garlic 2 (Squared) Rub & Seasoning
1 Cup Sliced Scallions
12 - 18 strips of Bacon
Sour Cream for garnish
DIRECTIONS:
1- Prepare the Big Green Egg for DIRECT heat at 400º
2- Wash, scrub and dry potatoes and then poke holes around it with a fork.
3- Wrap in foil and put on grill for about 20 minutes turning half way through.
4- Mix 1/2 of the cheddar, the cream cheese and scallions until combined and set aside
5- Remove potatoes from grill and cool until you can handle without burning your hand.
6- Once cooled cut tops and bottoms so they will stand upright and you can scoop out insides.
7-Using a melon baller or a spoon, scoop inside of potato leaving enough around the edges and bottom to stay firm.
8-Fill potato with cheese filling. Then wrap with bacon holding in place with toothpicks.
9- Place ConvEGGtor in BGE and lower temp to 350º
10- Once at 350º place potatoes upright back on the BGE and cook for another 30 minutes
11- After 30 minutes place heaping mounds of remaining shredded cheese on top and cook for another 10-15 minutes.
12- Remove from Big Green Egg and garnish with sour cream, scallions and a few dashes of your favorite hot sauce
