Foul medames | Egyptian fava beans recipe| Ful medames
Egyptian fava beans with tomatoes, cumin and olive oil with a touch of lemon juice.
Ingredients:
Canned fava beans-1
Tomatoes-2 ( finely chopped)
Onion-1 small ( finely chopped)
Garlic-1 tablespoon ( finely chopped)
Cumin powder-1/2 - 1 teaspoon
Paprika/ chilli powder-1 teaspoon
Pepper powder-1/2 teaspoon
Olive oil-2 tablespoon
Water-1/2 cup
Lemon juice-1 teaspoon.
topping: Olive oil, tomatoes, green chillies , parsley leaves.
Method:
1. Drain the fava beans.
2. Heat apan and add olive oil.
3. Sauté the onion until soft and add the garlic.
4. Add the spices and saute over low heat for 1 minute.
5. Add the tomatoes and cook over medium heat for 1 - 2 minutes.
6. Add the fava beans, salt and water.
7. Cover and cook over medium low heat for 8-10 mionutes.
8. Open the lid and mash the beans lightly.
9. Add the lemon juice and mix until combined.
10. Top with Olive oil, tomatoes, green chillies , parsley leaves.
11. Serve hot with pita bread.
