FOUR BEAN VEGETARIAN CHILI
nonstick spray
olive oil, enough to coat pan, plus 1/8 cup
2 onions, chopped
1/4 cup chili powder
1 tsp chipotle chili powder
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp salt
1/4 tsp freshly ground black pepper
4 garlic cloves, minced
1 - 2 large chipotle peppers (or 3 - 5 small) from canned chipotle peppers
in adobo sauce, seeds removed (optional, see Notes) & minced
4-ounce tomato paste
1/2 - 1 Tbsp chipotle adobo sauce from can of chipotle peppers in adobo
sauce
6 cups low sodium vegetable broth
2 (14.5-ounce) cans diced tomatoes
1 (15-ounce) can chickpeas, drained & rinsed
1 (15-ounce) can red kidney beans, drained & rinsed
1 (15-ounce) can pinto beans, drained & rinsed
1 (15-ounce) can black beans, drained & rinsed
2 tsp Worcestershire sauce
1 (15-ounce) can whole kernel corn, drained & rinsed
1. Over medium heat, spray a large pot with nonstick spray and coat it with olive oil. Add onions. Cook until translucent, about 5 minutes. Reduce heat to low. Stir in dried spices, cooking for 1 minute. Stir in garlic and chipotle peppers. Cook 1 minute.
2. Add 1/8 cup olive oil, tomato paste and chipotle adobo sauce. Cook while stirring, 2 minutes. Add broth, diced tomatoes, chickpeas, kidney beans, pinto beans, black beans and Worcestershire sauce. Stir, bring heat to a low boil, reduce to simmer, cover pot with lid and cook for 30 minutes. Stir, taste broth and if needed, adjust seasoning. Cover pot and cook for 30 more minutes. Stir in corn (see NOTES). Cook uncovered for an additional 5 minutes. Serve
NOTES
1. If adding seeds from chipotle peppers to chili, note that the more seeds you add the more heat intensity added to the chili.
2. If you need to thicken chili, mix 3/4 Tbsp - 1 1/4 Tbsps all-purpose flour with 1/2 cup broth from pot of chili. Whisk together until fully combined and add into pot during the last 5 minutes of cooking, right after adding in corn.
