I freeze dry peeled, sliced oranges, lemons and grapefruit. When they are done I crush them into powder, jar them with an oxygen packet and a moisture packet. I use moisture packet on all high sugar items and most things I crush into powder. They do crystallize a little but not bad. The peels I freeze dry as well and grind them them up for zest and tea. The best orange and grapefruit juice I have ever had. Lemons juice I use for cooking as I don’t care for lemonade. Have not tried prune juice. I also take unsweetened juice from canned fruit,add a banana with another fruit or two, whatever I have on hand but always fresh fruit. Blend it in my mixer and freeze dry it. It is my grandkids favorite. I haven’t done apple juice from fresh apples because we all love freeze dried slices apples to much to turn them into juice.

When u use fresh fruits even with the peels do they dissolve pretty well as a powder ice in water n have u tried freezing veggies n making powder

@@makinMYway75 the juice reconstitutes in cold water really well. I do a lot of freeze dried vegetables, herbs and spices. Some for snacks, some to be reconstituted for meals and some to powder. The powder is to add flavor to what I am cooking or to hide from picky eaters. Either way it works wonderfully.

Hi, Phil. Thank you for this video! I am an avid juicer. I make fresh veg juices from beets and apples together, carrot, apple, ginger and orange juice, kale, apple, and jalapeños, etc. Do you think these would freeze dry if diluted as you’ve done here?

Some of these may not need dilution. It depends on the sugar content. I would think carrot, ginger, kale and jalapenos would be just fine. FD some small samples and see how the crystal growth reacts. To shorten the cycle time, pre-freeze your juice 24 hours.

My understanding is that fruit concentrates of any kind will expand and crystallize. Doesn’t matter if sugar was added to it or if it was organically made with no additives. I was hoping to fd blueberry concentrate and then make into a fine powder for pills or adding to water

A good tip, cellophane lined in 8x8 square pan and pre freeze and transferring onto trays works great.

@@permofit I think you can remove the cellophane after it’s frozen, when you put it onto the FD trays. It won’t stick to the tray.

Phil - I did Del Monte OJ, (1/3 H2O), dropped temp to 115, and had great results until bagging time. As OJ powder reabsorbed some moisture, it became sticky. I used a desicant in mylar and the powder remained loose. Previously, I tried pineapple juice with O2 + vac in mason jar and it went hard as a rock. Can you advise as to how to reduce stickiness at bagging time ALSO why we are not supposed to use both O2 and a desiccant in the same package? Alternately can you direct me to some research on the O2 / Dessicant question? Thanks in advance for your opinion

Juices are very hydroscopic and need to be bagged quickly. I'm lucky I live in a dry climate. I haven't used desiccants. I'd have to do some research on the subject.

I would be curious to see how cranberry juice does. I will try during the winter when cranberries are in season. I would also be interested in how fresh squeezed juices do vs store bought.

Thank you for this testing. I have tried doing lemons and oranges and it was too crystallized. I think I will try OJ and the prune juices though just in case we should need a little help moving things 😂!

I've been thinking about this and wonder if there is a solution in the form of a silicone container of some kind. Looking at amazon I see a Palksky brand silicone mold for granola bars that looks about right. If the sugars don't stick it looks like a possibility. Not only that, they are shaped about right for freeze drying other things in portion sizes.

I had the same issue when I done my homemade barbeque sauce. It has so much sugar in it I had to dilute to 4 parts water to 1 part sauce in order for it to not crystalize so much outside of the trays. Was a terrible learning experience starting from 1 to 1 to 2 to 1 then finally 4 to 1 both of the priors were terrible mess to clean up. I make the BBQ sauce in 2 gallon batches yet not very often so I freeze dried it. Not sure if I'll do it again though as you stated it takes a very long time to do when having to dilute it that far.

would that be working if you freeze a layer of water first and pour the juice on top of that before freeze drying? the layer of water ice maybe acts as isolation layer to prevent the juice sticks to the tray?

It's a little more work but couldn't you just add yeast to the juice which will turn all the sugar into ethanol which could be distilled out because it has a lower boiling point then both water and juice? Then you could freeze dry it in its sugarless state then you could rehydrate it and add sugar or stevia to taste.

Hello Phil... Thanks for the video. I have to admit, I am really confused by this methodology (for juices / broths) because of the large amount of energy needed to perform the "Freeze" part of it. So, I was wondering about an alternative method: instead of Freeze Drying using the traditional process, perhaps it would be better to go straight to "vacuum dry" using the vacuum pump, without freezing. My logic is as follows, it appears that the main reason to "freeze" the food is to allow for food to maintain its original shape, while using sublimation to remove the excess water. That entire process requires a lot of energy because you have to freeze the product and then draw the vacuum. However, with "juices" and possibly broths and other similar products, I don't see the value of "freezing" the juice/broth. We are not going to actually "preserve" any structures in the juice or broth. So why bother going thru the process of "freezing"? Pros #1: Saves money because with vacuum drying you don't waste energy freezing, and since you are not elevating temps, you still retain most of the nutrients. Pros #2: My "guess" is that vacuum drying (only), or vacuum drying until the juice is dry, and then freeze drying if needed, would eliminate most of the issue with sugars expanding. Cons: Unsure... Is there any real concern about simply vacuum drying a juice or broth? I suppose one could run a rapid cycle of freeze drying "after" the entire contents was dehydrated by vacuum to maximize the shelf-life. Since the juice is already dehydrated, I am not sure of the added benefit, tho perhaps the cycling effect does add something to help long term preservation. Thanks for any thoughts.

Freezing controls boiling. If you apply a vacuum to any liquid you'll boil your liquid away and make a mess. At 500 mtorr it almost an explosion. This is where liquids can enter the pump and mix with the oil. To save time and energy I prefreze my trays in my upright freezer overnight and place them in my FD 45 minutes after turning it on when the temp reaches around 15-20 degrees. The heaters slowly warms the frozen food and the vacuum "boils" small amounts of liquids away and freezes the vapor on the wall of the chamber (sublimation). kzitem.info/news/bejne/kauDt2yYnYx2oqA

I don't see any point in FD prune juice. Prunes keep practically forever. If you want juice, just whirl in a blender with water. But it's always interesting to see your research.

Lemon aid or lemon juice? Lemon aid has added sugars in it. I wonder how fresh squeezed lemon juice would be pulp and all. Make your own lemonade with freeze-dried freshly squeezed lemon juice. Also, what about apple cider?

I did Lemon Juice once. It was from a bottled product. Added water and it turned out good. I powder it and put in a vacuum sealed jar. I did lime juice and it was a disaster.

I bought lemon juice at Costco that comes from Italy that are in bottles and all it has is lemons no sugar but I tried to freeze dry it and had no luck. It was just sticky.

Too funny Phil!… Frozen Orange Juice was the first thing I tried when I got my HR Freeze Drier! With the same Kroger OJ. And just like you experienced, it was a total disaster!!! Ballooned up over everything. I had to call HR to ask how to clean the OJ off the heating elements (which I was told to just use hot water). Total mess! Also, when you mentioned prune juice, I immediately thought of Worf (from Startrek Next Generation)! Also too funny! “A warriors drink” (NOT)! Also, have you tried using parchment paper under the juices? I’ve seen other channels using this (but I never tried).
