I LOVE you, Ms. Pam! 😊 I am in full swing hurricane prep, this year (2024). I have been watching and listening to those smarter than I am, and their concerns have me paying attention! I have my 3rd batch of fast beans in the freeze dyer. THANKS for that! NOW, You just gave me my next task, because I have a freezer stocked with thighs, and legs that I have been wondering what do I do with these? And, here you are, once again. Not only will I get them moved out of the freezer, But, I can have ready to go BBQ chicken for my ER pantry. 😀

I go to Costco and get their whole rotisserie chickens and debone them and put barbecue sauce on it and freeze dried it, WOW DELICIOUS!!😋😋😋😋😋😋😋

I'd love to make a suggestion: zero out a scale with the tray, put everything on the tray, weight it, freeze dry it, weigh it after with the same zero data, calculate the percentage of water loss, write that down on the container. Now you will never have to worry about excessively or insufficiently watering your food (that sound silly lol)

I have tried that several times and I know many people recommend doing that, but I have had very mixed results. I can pretty much eyeball it with more consistency than collecting data, and I am a data person! Go figure!

My husband and I just bought a large harvest right freeze dryer! I’ve done ice cream sandwiches and skittles for my sons and then I did some fruits yesterday and now I’m prepping for this pulled chicken. I have a ton of frozen chicken that I need to clear out of my freezer and this is a perfect idea!!! ❤ this is the way we plan on storing our food also. We have pre-frozen lots of our batches but quit doing it on most batches since the new software update does not have an option to select pre-frozen and frankly, we have not noticed much of a difference. We still pre-freeze things like buttermilk and eggs--they seem to do better that way.

I purchase rotisserie chicken from the Sam's club. Then I shred it,and place in freezer to freeze dry the shreaded chicken , store it in gallon size mason jars. Then i take out just enough for a sandwich or two and place in a bowl of hot water. Mix it fir a minute or two and strain the water out .then i mix the B/Q sauce into the bowl and then place the bowl into micro wave for 2 minutes . And then place the B/Q chicken on a hamburger bun I do the same thing on pork roast ( i pressure cook the pork roast ) for 1 hour and 20 minutes then remove roast and shread the roast and place in freezer to freeze dry

I purchased a big pork from the Grogery store , cut it up into 4 big sections that gives me 4 pork roast and once the pork is freeze dried = 4 gallon size mason jars

We do this with Costco rotisserie chickens. Three shredded chickens will fill out four trays pretty well. Do you use new lids with the jars when vacuum sealing? Have you ever tried tattler lids for vacuum sealing? Lids have gotten so expensive.

Pam on another channel I have seen others put their freeze dried food and liquid under vacuum pressure to re-hydrate their foods. I know that liquids under vacuum pressure will penetrate the foods in vacuum sealed jars as I have used this technique to marinate meat. But was wondering if you had tried this with freeze dried food and how successful it is. Since you have a portable vacuum sealer for your jars it would not be so cumbersome to take that little device along on a road trip or a short outing. Another interesting video!

I have three questions for the next "answering post". 1. I canned apple pie filling with flour before I knew that was not safe. Is there any way to salvage it? 2. What happens if I add too much liquid to canned meat, then it makes its own also? 3. We tried to dehydrate fruit that was not quite done in the freeze dryer and it got worse. Do you think that is because we are not in the desert? I wrote these questions on the post from 10 months ago but not sure if you go back and check old posts.

There are videos on bread and those kinds of things. I see them wrapping them in damp paper towels and leaving in fridge overnight or steaming them. Probably there are many more ways to do it. It is so easy to mix up dry mixes that I haven't done that yet.

It is no recommended to dry meat in a dehydrator. I don't do it. It really isn't safe.
