The classic salad of chicory with a warm bacon dressing and a sunny side up egg is still seen by people of a certain age as a Depression-era punishment, but, made like you give a sh*t it's quite good. That said, if I make this for my Grandmother I'll probably use frisee or spinach.
There's a couple good tricks in here even if a salad of raw dandelions dressing with bacon and an egg doesn't sound appealing. Pay close attention to the way I cook the sunny side up eggs here-that trick (credit to J Kenji-Lopez Alt) is one I had my line cooks use for every fried egg we would cook for Brunch when I was chef at Lucia's restaurant in Minneapolis.
Other than that this is just a salad of bitter greens with bacon and eggs. If you add a little parmesan cheese and a few fresh herbs like mint or tarragon it can add a good dimension too. If you have access to wild lettuce, specifically Lactuca canadensis, they're even better than dandelions. Full recipe in the link at the top of the video description on my site.
