Linguist here: actually both Spanish and French borrowed this word from indigenous people of LatinAmerica some say it's the Taino others say it's a quechua word "ka'á" (tree branch or tree trunk) + "oxú" (tear) pronounced KAH-U-CHOO. The crazy spelling is just a reflection of the native tongue transliteration. Same with Nahuatl (Aztecs/Mexico-Central America) that gave us words like : chocolate (cacahuatl), coyote (coyotl), avocado (āhuacatl), etc.

Rubber - "thing that rubs," 1536, from rub. The meaning "elastic substance from tropical plants" (introduced to Europe 1744 by Charles Marie de la Condamine) first recorded 1788, so called because it was originally used as an eraser. Goggled and copy pasted here.
