Rather than drying out in the peels in the oven, try storing whole rinds in the freezer or refridgerator (to maintain freshness and inhibit mild formation). When you feel like an Earl Grey 'home brew', take the peel out of the freezer/refridgerator and grate off some shavings using a fine cheese grater. The smaller pieces infuse flavour and aroma volatiles into the hot water faster than more coarse pieces of peel. Drying in the oven- a very hot and dry environment- is not the best idea, as the delicate and volatile molecules (terpenes, esters, ketones, etc) that contribute to the overall flavour and aroma 'bouquet' are lost due to evaporation/volatilisation and oxidation by oxygen in the air. Hence, the resultant infusion is disappointingly bland. Try making bergamot icecream or sorbet- it is delicious and refreshing. I am growing bergamot 'Fantastico', citron (including Buddha hand) and tamarillos in England. Try growing your own 'weird fruit'!

I would think that it would make more sense to peel the zest off with a peeler, and dry those strips out. The white part has little to offer as far as flavor goes, but a lot to offer as far as bitterness goes, haha.

Hi! I I'm italian, and in last couple years I had the opportunity of getting fairly good quantities of very typical bergamot fruits, as they're gradually getting more and more readily available in these last few years. So, I can say a few things about bergamot :) 1) I've seen just 2 or maybe 3 different varieties of bergamot, I think that there're not many more out there. It's an hybrid and it's almost sterile, so maybe just a few mutations are available. And all the ones I tried were yellow, with some green and very few orange shades. Smell and taste was always the same, and just the shape of the fruit can vary a little. 2) Smell from the scratched skin is really floral, very different from any other fruit of citrus family. It's very typical of bergamot, and even scientists don't know how a simple cross of two species resulted in a fruit with a totally different and unique aromatic bouquet, and different chemical properties as well. 3) I tried the fruit in some different ways. The whole candied rinds are really, REALLY good, and work just fantastic into some typical Italian cakes. They have a typical bergamot twist that only mandarin candied rinds can maybe match. Mandarins and bergamots candied rinds are very different though, and they work fantastic if combined into cakes! Bergamot curd can also be extremely good, but it's advisable to take off some of the rind from it before cooking (or alternatively add it with some lemon minus the rinds), because otherwise it can be a little too much, it can get a little bit too close to the sensation of eating marmalade added with body perfume (something like Eau de Cologne). I don't like pure bergamot juice very much, it's a combination of sour and bitter that's a little too difficult to drink for me... But I casually found that it's really, really good if it's added to orange juice. This mix really gets the best out of both fruits and improves both... I found it being way better than mixing oranges and grapefruits. Instead, I never tried doing homemade Earl Grey tea! You gave me a great idea, I just bought some of maybe the very last bergamots of this season, and maybe I could try it! P.S.: bergamot originates (and is mainly cultivated) in a region of South Italy called Calabria, close to Sicily. It's not a very old hybrid, or at least cultivations are not that ancient, like no more than maybe 150 years... and this is not so much for Italy.

200F in the oven is pretty aggressive. Remember, the essential oils you're trying to keep are typically steam-distilled. You probably blew most of the good stuff off in the oven. Might try less heat or another drying approach next time.

The mint-related plant called Bee Balm is also called Bergamot. They are very common field weeds here in northwestern Arkansas, and the leaves have the taste and odor of very strong oregano.

Hello Jared! Excellent fruit tasting video, as always. You may be interested to know that gourmet tea companies habitually produce at least a few different varieties of Earl Grey, since the taste depends on the particular bergamot variety used to produce the oil, and also (very much) on the type of tea used. The most famous EG producer, a French company with ties in the perfume industry, has over 20 types of Earl Grey, most of which contain nothing but tea + bergamot essential oil. And they're all incredibly different, yet remarkably similar. (I don't know if I should mention company names here, so I think I won't...) And another thing, I think one reason for your tea's weak bergamot taste is the type of tea you used. It's not only Assam, which is always a very strong tea, but it's also broken leaf (or CTC, can't be certain from the picture) - with most teas, the smaller the particles, the more flavor they release, and the less nuance to that flavor. Since bergamot peel releases comparatively little flavor, it'd likely work much better if you used a whole leaf Ceylon variety, or a Ceylon+Assam mix.

I don't think I do, but I wouldn't be surprised if some did add oil _and_ some peel as an extra. In my experience peel is usually reserved for fruit teas and mixed herbal blends.

One thing you could do is do an extract: grind the dried peels in a mortar, pour the strongest alcohol you can find on it, and let sit for a day or two. The alcohol extracts flavours very well, and you can use just a tiny teaspoonful of it to probably get enough flavour for a full cup. Admittedly, I've never tried this with fruit peels, only with herbs. With herbs, you want some sugar in there when you smash them up in the mortar, since the sugar crystals 'cut' the leafs in a way that helps the extraction.

Pekoe, in Chinese, Amoy / Xiamen dialect, means fur ... or fine hair ... Pekoe Tea leaves are the smallest and have such very very fine down / fur on them ... Most Pekoe Teas from Ceylon / Srilanka, Indonesia or India are not Pekoe Teas ... they just have the name ...The most heinous crime done to Tea was done by the English, making it look like dishwasher and tasted nothing like Tea, by adding Cold Milk and Sugar ...How very sad ...suddenly that became the National Drink of the Anglo and their subjects, the world over ...

Earl Grey has always been associated in my mind with Thai tea which uses crushed up tamarind seeds? It's not always easy to convince a vendor to sell unsweet Thai iced tea but it's got a remarkably similar quenching effect in my experience. Of course it seems popular to add corn flowers to Earl Grey? I suppose adding the zests of a variety of citrus might be the way to go with any black teas. It's not bad with coffees either. Italiano if you're ordering it. I've been known to add zest to a smoker's mix, and oils are amazing to add to your smoker's rolls. Whenever you're in a free land

I tried to make Earl Grey by adding a drop of bergamot essential oil: I don't recommend. The bergamot was so strong it made the tea undrinkable. Live and learn.

Good tiip about aging the bergamot rind for tea. Also, you mentioned Assam tea. Which is a wonderful kind of tea flavorwise. I am learning recently though, that we need to be mindful of the ethics of harvesting for some teas, particularly Assam and Ceylon to make sure there is support and fair trade with the growing communities. I'm trying to learn better, and writing to ask questions of tea companies when choosing such teas. I'm not sure I found the right tea yet, wish I had an example good link to share. Thanks for your videos! They cheer me up :)

I think you might not need to use either less or more tea, but maybe a different tea, reddish-golden assam tea (and also dian hong/yunnan gold) tend to be very pungent, even with a bit of pu'er-like "funk", specially when bought as CTC (crush to crumbs), which is common with assam tea, it can be very intense, maybe try a nameless ceylon tea, or a short leaf chinese black tea like qimen/keemun with more whole leaves and i think it would taste less strongly from the tea, but still with a nice black tea background.

In my country marketplace if you browse for bergamot essential oil then the product picture they include kaffir lime picture NOT real bergamot picture. In university second-year chemistry we extracted limonene from grapefruit and lemon and orange peels - a fun but labour-intensive lab. Wonder if on an industrial scale the bergamot oil extraction is similar to that extraction...

I think by juicing the bergamot before removing the rind it may have expended a lot of the oil before it was dried. If I were to try this, I would cut the bergamot into quarters from the top down then carefully remove the skin before drying, then use the insides to juice or make into jam. This would leave a lot more oil in the skins and thus make it into the tea.

Try grinding the peel to get a quicker infusion. More surface area in the bergamont will transfer the flavour into the tea faster.

you should have scraped most of the pith (the white stuff on the inside of the peel/rind) off because pith is bitter. and should have air dried / hang dried it.

This is an old video, but I just got some useful info here. I have a bergamot orange and I was wondering what to do with the fruit of it. I just picked one that have been on the tree for about year. They were more than ready last winter. Most of the others have fallen off. I thought it would be all dry inside because the skin had puckered up. This peeled like an tangerine, but inside seems similar to what you showed. I chewed on a piece of it and the feeling on my lips has not quite gone away. I do not smell any bergamot smell but i will try to do what you did and leave it to sit with some black tea. This one is now quite seedy, leaving it on the tree for year could be responsible for that. It was quite juicey. There seems to be more than one begamot organge tree in the literature. I purchased mine from just fruits and exotics just south of Tallahassee. They have some sensitivity to cold, but by covering mine I have got it through our northwest florida winter. I may try to plant some of the seeds. When planted from seeds they can come back from the roots. But it is a hybrid and do not know if it grow true to seed. Some citrus do and others do not. Perhaps air layering it is the way to go. I also have sour oranges and flying dragon trifoliate orange. Maybe their peels will be useful for something also.

Hi ! It's rinds are going to be an alternative to statins (cholesterol lowering medications) and they can even reduce LDL particles which is being researched thesedays. They have bioflavonoids that are found just uniquely in them.
