In this video, April makes a recipe for one of her favorite southern casseroles, corn pudding! This one is made with fresh, sweet corn, and it's lightened up a little from the traditional version. Give this one a try for your Easter brunch or lunch this Spring, you won't be disappointed!
Serves 8
Ingredients:
3 tablespoons butter
2 1/2 cups fresh corn (may substitute frozen)
2 green onions, chopped
2 eggs
1 can 2% evaporated milk
1/2 cup light sour cream
1/4 cup yellow cornmeal
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup sharp cheddar cheese, freshly grated
Directions:
Preheat the oven to 350 degrees.
Melt the butter in a skillet and add the corn and green onions, cook for 4-5 minutes on medium heat until the corn has slightly softened. Remove the skillet from the heat and set aside.
Meanwhile, whisk together the eggs, milk, and sour cream until there are no lumps. Next whisk in the the cornmeal, sugar, salt, and pepper. Add the slightly cooled corn mixture to the "pudding," and then pour everything in a sprayed (9x9inch) casserole dish.
Bake the pudding for 30 minutes, sprinkle the cheese evenly on top of the casserole and bake for another 10 minutes. Remove it from the oven, cool slightly, and serve warm.
