This video will show you step-by-step how to boil this crab porridge or crab congee. The most important ingredient is fresh crabs. First, wash and clean the crabs thoroughly including the outer shells. Open the crab shell and remove all the inside lungs and stomach. Pat dry and put aside. Use one cup of rice, wash and soak in water for at least an hour. Drain out excess water and start to marinate with some salt & oil. Mix well and leave it for at least half an hour. Prepare some spring onion and dried raddish. Cut into small pieces. At the same time, chopped some shallots as well. Use high fire to heat up the oil and then fry the shallots first, then fry the crabs together. The crab shell can cook later. Turn the crabs to the other side to fry until golden brown. Add hot water and now you can add the crab shell in and boil together. Let them boil a bit for at least 15-20mins. Take all the crabs out of the soup and put aside. Now, you can pour all the rice into the crab soup. Use high fire and stir frequently for 20-25mins. Turn off the fire and cover with a lid for at least 20mins. Turn on the fire again to heat it up. Don‘t forget to stir occasionally. Add half a spoonful of creamy peanut butter into the porridge. Stir and let it boil…. Then add all the chopped dried raddish & spring onion. Boil & boil, the last step is to add back all the crabs in to decorate it nicely. Actually, it can be served now but in order to increase the flavor & texture of the porridge… I like adding a pack of Ochazuke Nori. Just sprinkle in the centre, just stir a bit when finally served. It tastes so good. Try it and enjoy….
