Chef John I have been following you since 2008. I was single back then, my waist was narrow and my mind was broad. I have tried dozens of your recipes and you have really helped me up my cooking game. Even to date every time there is a notification, I drop everything to watch your video. Gone are the days when I could eat like a pig and not gain a pound. Some of it I am blaming on you :) EDIT:In 2010 I married a girl who was rather quite impressed by my cooking skills. Chef John had a lot to do with that. She has bore me 2 wonderful daughters. Waist may not be narrow anymore. The back and neck may not be hairless anymore.But life is quite wonderful.

I just so happened to have literally every ingredient for this. I immediately got up and made these, and holy hell this was beyond amazing! Legitimately one of the best deserts I’ve ever had. The bourbon syrup is going to be going on so many things from now on as well!

I worked at a bakery as the Fritter King. I made fritters out of everything I could find. I used natural juice over any liquids, but I did use a couple tablespoons of buttermilk.

Yeah, but the peaches have that unique thicker syrup they exude when you add sugar, and you need that to make this work, just like some fruits have pectin, some don’t.

Dude! As per usual, you're recipe is spot-on and yummy! I doubled this batch and was a little nervous that it was too dry. You're a wonderful host because you said it would look dry, so I kept the faith. The batter came together just like you said it would. These were really, really good! Speaking as an ex Baskin Robbins employee, you should dip your scoop into water before scooping your ice cream. The temperature doesn't help as much as the scoop being wet.

The truth about deep frying: if there’s plenty of bubbles, what you’re cooking is not absorbing oil. It can’t absorb oil while it’s steaming off.

Not quite how that works. Solid food doesn't absorb much oil, but any coating you put on it absolutely does. It does not matter if you remove a battered/breaded item before it finishes cooking,(and before the bubbles slow down), the coating will still be oily, because it absorbs oil. The air fryer commercials leave out the fact that you can't put breaded or battered items in it. Air fryer commercials only tell you the difference between a coated deep fried item, and an uncoated air fried item

I know that I will never buy a deep fryer, because if this recipe cannot convince me then nothing will. If only there were a place you could go and pay a few bucks to use their fryer, akin to people sitting around a fondue pot.

Use a saucepan or small pot on the stovetop. It's what I usually do, because my fryer isn't big enough for much.

If you don't do a lot of frying I'd just get yourself small-ish metal pan with a thick base that you can pop oil into and heat it on the stove. When you're done, let the oil cool then use a funnel+fine mesh strainer and put it back into a bottle until the next time you need to deep fry something. I got myself a pan that was just big enough to take a 1 Litre bottle of oil with an inch and a half clearance between the surface of the oil and the top of the rim. Every so often I'll either make myself some fritters or I'll make a batch of Methi Pakodas (asian snack made with chickpea flour, chillies, onions, and whatever else you may feel like putting in them). Yummmm :)

Georgia peaches are legendary, but we do have a certain area in Colorado known for amazing peaches. Not trying to take your title, you grow FAR more than we do; but the area around the small western-slope town of Palisade, CO has the soil and climate to grow excellent peaches, which we are known for. Our real claims to fame are the Cantaloupe melons grown near the town of Rocky Ford, on the high plains east of Pueblo; and the Pueblo green chili pepper, which is the feisty brother to the New Mexico Hatch chili pepper.

@@kennethcook9406 - I believe it. Actually, the pockets in Georgia that have good peaches are hard to come by these days. They don't grow as much as they used to. I've had some great peaches from different states. Can't wait to head out to that Palisade area in Colorado and try yours. When's the best time for those peaches? And the best time for the canteloupe and green chilis? Those sound great too!

@@knowledgetracker Summer for everything. June through September. Although chili peppers can be grown indoors year-round. Also, you can get a Rocky Ford Cantaloupe at almost any Kroeger-affiliated store in the state (King Soopers, City Market)

@@knowledgetracker The eastern half of our state is considered as "high desert" so the area around Rocky Ford forces the cantaloupes to concentrate their sugar in the melons; while Palisade is in a strange intra-mountain area that creates a good climate for a lot of different fruit, including peaches, cherries, and wine grapes. In fact, if you can name a berry, we can probably grow it (or something like it) somewhere in Colorado. For example: the big juicy strawberries that are sold everywhere in every store, are total garbage when compared to the tiny wild mountain strawberries from an appropriate environment.

These peach fritters sound so awesome, and it’s peak peach season now! I think I like your bourbon simple syrup, but for simplicity (that means cutting corners) I think I’ll try it with maple syrup or hot honey simple syrup (just dilute the hot honey with a little water just to make it thinner.) Honey on vanilla ice cream is awesome, but I’ve never tried the hot kind. Thanks again Chef John! This is a good one.

Time for a trip over to Brentwood or a local Farmer's Market. We certainly can't get great peaches in our supermarkets any more. Hybridized to increase shelf life and reduce shipping damage losses these hard as a rock in the market "peaches" suck. Thanks UC Davis.

Can you use fresh peaches that are on the "extra firm" side? That seems to be all I can find in grocery stores. The one you were peeling looked pretty firm.

Put them on a windowsill or kitchen counter to ripen a bit more. But I would think you can still use them. The sugar should soften them up. I think it breaks down the cellular structure as it draws the juice from them.

Bad editing on this short has many people confused. Recipe calls for 1/2 cup self rising flour. You can make your own using 1/2 cup all purpose flour with 3/4 t baking powder + 1/4 t salt. It's explained in the recipe link in the full video.

Hi Chef John, I was wondering if the airfryer or baking in the oven would work with these? When I was 6 my younger brother was in a walker moving around. Mom was cleaning up after dinner and was cleaning behind the fryer, a bit of the cord had fallen over the edge and my 9 month old brother was rushed to the hospital, I was traumatized after that. So, I don't use fryers or fry in deep oil in a skillet for that reason, if we do have something fried my husband has fried everything. Since I'm the baker, the only thing I don't bake are cookies, I'm more of a one pan and done gal, I can't ask him to fry these so I thought I'd ask about the airfryer or oven. My brother is fine btw, a little scar by his ear that is barely noticable. He's 43 now and I'll be 49 in December. (but I still can't fry anything, makes me nauseous every time I think of using a fryer or frying in a pan).

with respect, that's a silly way to cut up a ripe peach. I find the best way is to cut all the way round the diameter on the natural cleavage line then twist the two halves apart, similar to an avocado.
