Have you read "Cider Hard & Sweet?" It sounds like you are using an excellent blend of apples for this Hard Cider, slightly jealous haha. We have also moved into filtering all of our batches of cider, Cheers! Best, David and Rachel from CFS!!

I have read it! That and The New Cider Maker's Handbook are good information! Filtering is definitely great, but a bit costly and the losses can be annoying, but you get great results. If you'd like, I can send you two a bottle for tasting!

oh man, I'm super jealous of you being able to get orchard apples for 50 cents a pound! I've got a handful of orchards around me in southwestern minnesota, but $1 a pound is a great sale price, and most varieties tend to be around $2 a pound sadly. I'm curious, is that the normal price over there, or did you get a discount for buying almost 70 pounds of apples? super glad I found your channel, there aren't enough cider focused channels with high quality content

Great video, have you tried adding steeped black tea for tannins or acid blend products for acid? You had access to cran and other cider apples but asking for for store bought low acid, low tannin juice base - thx

I have in the past. In my opinion of you're using additions, powdered wine tannin, and malic acid is the way to go. When I'm using store bought juice, my personal preference is to balance without those additions. I use oak staves for tannin and use sharp apples like pink lady or granny smith for malic acid.
