A small update: I made this recipe at home for my mom and myself - although we ate it hot like a pasta dish (it wasn't that how outside). We both absolutely loved it and can't wait to make it again. It is indeed very fresh, light and due to the herbs very easy on your digestion. We both tend to react quite strong on garlic but this dish posed no problem at all.

The oil mix creates a coating which allows the other ingredients to cling to the pasta. Otherwise, the coverage of the ingredients on the pasta would be patchy or even puddle at the bottom of the bowl rather than coat the pasta.

I've made this sort of thing before and am glad to see it promoted in these hot months. I only push back a bit on your assertion that parmesan should be the one and only cheese with pasta. I assume you're being tongue in cheek? In Italy, anyway, there are pasta "Summer sauces" (non-cooked) using ricotta and parsley/mint, and another one that uses halved cherry tomatoes with diced fresh mozzarella and basil. All that said, I love your channel!
