Mill 2 cups of hard grain (white or red)
1/4 cup sugar
2 TBSP oil
3 eggs
1 cup of milk/water
Mix and cover 15 minutes.
Mill 2/3 cup hard grain. Reserve.
Add 1.5 tsp salt. Mix and let sit covered 5 minutes.
Add 1 TBSP instant yeast and knead 8 minutes. Begin to add reserved flour in needed. Do not add too much. Watch the video for the consistency you want. You want your down to be wet, but to loosely keep shape before it slacks back.
Cover and let rest 45 minutes to 1 hour.
Shape dough. Cover with greased plastic wrap and let rise for 45 minutes to an hour until you see it coming about your 9x5 inch baking pan.
Brush the top with egg wash and bake at 375 degrees F for 30 minutes.
