Can I do it without lard, clingwrap and parchment paper? Maybe beat in an egg instead, and use plastic sandwich bags to store in fridge? I am so excited to try this!!!

Can you make the dough a day or 2 ahead of time and just refrigerate it? Also, I see on the blog you can freeze them them reheat in oven. Does this turn out pretty good? Thanks for the recipe I'm looking forward to trying it.

Hello wreckoningday, It is nice to meet you. Yes, you can make the dough ahead of time and refrigerate it for up to 3 days or freeze it (wrapped well) for 2 months. (Defrost in the refrigerator overnight before filling and frying) The Fried Hand Pies reheat in the oven really well. I'd love to hear about your baking adventures making the recipe. They really freeze well which is nice. I like that this recipe isn't overly sweet so the flavor of everything is really good. Thanks!

I made fried cherry turnovers and apple turnover My picky eater who does not like cherry or apple turnover went through them like crazy He was eating the apple turnovers left and right He was like can I have another can I have another I had to slow him down We got four other people living here He was very excited when I made all apple turnovers the next day He ate them like crazy too leaving me nothing. Also I made a frosting where I add a little bit of milk and powdered sugar with some vanilla extract it turned out okay Drizzle it over the Apple and cherries turnovers and it was on. He's a little skinny fella but I'm wondering now should I enter him in a pie eating contest🤔

If I plan to make a lot of pie crust is it ok to use a mixing machine (kitchenaid) or is this more of a hand recipe? How long can I keep the pie crust refrigerated/frozen?

Hello Greg, It is best to make this recipe by hand for the best results. Although, you can use a food processor to blend the flour, salt, and the fat. Then you can turn the mixture into a bowl to finish the remaining steps by hand. The pie crust can be refrigerated for up to 3 days or can be frozen up to 2 months for best results. You can double the recipe using the weight measurement for the best results. Please let me know if you have any other questions.

This has to be one the best fried pie demonstrations I have come across on YT. At first I thought the flour wasn't going to come together,but it was perfect. And that was a great idea to use the pizza cutter to really seal the fruit inside the pastry after the crimping. Thanks.

I thought it was a great presentation too! I've been looking for a recipe that had a good pie crust. Most use canned biscuits and they come out limp. I thought the pizza cutter was to clean up the edges tho? I can't wait to try this with my granddaughters!

Oh my, my!!! How I love a FRIED pie. These look scrumptious. Although, I am all for the simplicity of the pie making. I don't like making pie crust, so my ALL TIME GO TO SINCE 1985 IS THE PILLSBURY REFRIGERATOR PIE CRUST. I think it is just as tasty as any homemade pie crust with none of the work!!! (Personal opinion)

I would recommend test frying a piece of dough to see if it holds together and what the texture is like. This would be a good opportunity to make the recipe and compare the final flavor and texture of the crust against the store bought dough. I'd love to hear bake about what your results where. Hello Ria, Yes, you can brush the Hand Pies with egg wash and bake them in a preheated oven at 375℉ (190℃) for 20 to 24 minutes or until golden brown. Brush them with the glaze while they are still hot from the oven and then let cool before eating!

Are the peaches interchangeable with raspberries or strawberries? Or do those have to be prepared a different way?

Hello Sarah, It is nice to meet you. The cooked filling is made the same way using different fruit the only caveat is some fruit will have more water which will require a bit more cornstarch to thicken or you can reduce the juice before adding the cornstarch slurry (some of the reserved fruit juice mixed with the cornstarch). @@JustOneBitePlease Absolutely!! The other day my father bought "oatmeal" cookies from Costco. I was making some coffee, and stood there reading the list of ingredients on the plastic container. It was as long as a CVS receipt!! I threw them in the trash!! My father is 81, and eats very clean. However, he just assumed they were healthy. Nope, just fattening! At least with homemade they're delicious, healthy but still fattening! The taste is amazing compared to the fake one's.

Hi, I don't have lard of vegetable shortening and we are currently on lockdown so I won't be able to go out and buy some, any other alternative? and another question, you didn't use baking powder? is that ok?

Hello Airizhe, It is nice to meet you. You can use butter or any solid fat you might have for the recipe. No need for baking powder in the recipe for the dough. Here is an excerpt from my Bagel recipe: Eating a freshly baked bagel that is ever so slightly warm is a real pleasure. My favorite way to eat a fresh bagel is to split it in half, schmear on some fresh cream cheese, top with really good smoked salmon, and finish it with thinly sliced red onions and capers. I’m in sheer heaven when I take that first bite and everything is all right with the world. Please let me know if you should have any question about this or any of my other recipes. Cheers! P.S. I remember Katz's Deli on 6th and Rio Grande St. “Katz’s Never Kloses.” We would go there after the bars closed before heading back to San Antonio for the evening.That would have been 1987 to 2001. Hut's Hamburger closed just this past year. Time they are a changing.

Hello Kalah, It is great to meet you. Yes, this dough can be made ahead and either refrigerated or frozen for future use. If you freeze the dough pieces make sure to defrost completely in the refrigerator before rolling and filling. The filled hand pies can be frozen also and fried directly from the freezer also. Hello David, I would recommend to egg wash the tops of the Fruit Hand Pies and to bake at 375℉ (190℃) for 18 to 20 minutes or until light golden brown. You can brush the glaze on when the pies are still hot from the oven. Place on a cooling rack and allow to cool for 10 minutes before enjoying.
