Ingredients:
2-3 medium green tomatoes
Salt
1 cup Italian Bread Crumbs
1 cup all-purpose flour
1 teaspoon black pepper
Oil for frying (vegetable or canola oil)
Instructions:
1. Prepare the Tomatoes:
Slice the green tomatoes into 1/4-inch thick slices. Sprinkle both sides with salt and let them sit for about 10-15 minutes to draw out moisture.
2. Set Up Breading Station:
In one bowl, place the 2 beaten eggs and add pepper
In another bowl add the flour.
in another bowl add bread crumbs and a 1/4 cup of corn starch.
3. Coat the Tomatoes:
Dip each tomato slice in the flour and shake off excess .
Dredge in the egg wash and dredged in the bread crumb/cornstarch mixture while pressing down to ensure even breading.
4. Fry the Tomatoes:
Heat about 1/4 inch of oil in a skillet over medium heat.
Once hot, carefully add the breaded tomato slices in batches, frying for about 3-4 minutes on each side or until golden brown.
Remove and drain on paper towels.
5. Serve:
Enjoy hot, either plain or with a dipping sauce like ranch or remoulade.
