You can also bake these in a preheated 350-degree oven for 25 to 30 minutes. Make sure the pies are baked in an 11 by 17-inch baking pan. Remove pies from oven and let cool until warm. From there make and heat the glaze, dip the baked pies into the hot glaze. Place onto a cooling rack and let the icing set for 15 to 30 minutes and there you have it. New Orleans baked Lemon and Apple pies. Enjoy! :)

Hi Brother I grew up on these famous pies. I remember when the factory burned down. My first cousin back in the early 80's stayed sending me to the corner store for the lemon pies. I used to live on the 700 block of Mandeville St. in the Marigny and our backyard shared a fence with the Hubig's pie factory before it burned down. It was the house for the punk band, Sci-Fi Zeros and they would play shows and throw crazy parties there all the time (back before the Marigny turned into what it is now) and we'd always hook them up with mad barbecue when we'd have events so they would give us boxes... yes, BOXES of free pies. We lived off those things. I can't wait to make these. Especially the two best flavors. I'm kind of scared though because I'm pretty sure that yours are going to be better! We love you, Charlie! Your recipes will grace the tables and be passed on to countless generations of people who would otherwise never had the opportunity to learn these timeless techniques and secrets of true New Orleans cooking. That's awesome and I appreciate you for the compliments and for subscribing. You're welcome, not a problem. Yes, to bake them you'll need an 11 by 17-inch baking pan and parchment paper. First make and assemble the pies as the recipe video instructs. Preheat your oven to 350 degrees. Lightly spread softened unsalted butter onto the bottom your baking pan. Line a sheet of parchment paper into the baking pan. Add the pies into the baking pan. Place into a preheated 350 degree oven on the bottom rack for 35 minutes. Remove the pies from the oven and let cool until warm. From there make the icing and coat the pies with the icing as stated in the recipe video and let the icing set until it hardens. From there the pies are ready to be served. Hope this information I gave you helps. Thanks! :)

3:39 Hi. I'm only a few minutes into watching your video, and I had to stop long enough to ask you, what is that little gadget you use to core and slice your apple? I've never saw that before, and definitely want to get one! Now back to watching you make those delicious looking pies! 😍

I have always loved Hubig pies. I finally got some today. The crust was so thick I couldn’t eat it. Hardly any fruit filling. Half the crust and double the fruit filler would be perfect.
