Mee Siam
It is a spicy fried rice vermicelli noodles which is famous in Malaysia and Singapore, It is usually garnished with shredded omelette, scallions and lime wedges which make every mouthful a delight to savour.
Ingredients
250g Rice vermicelli noodle (soaked for 30 minutes)
300g bean spouts (clean and remove the roat)
150g Onion (cut ring slice)
100g Carrot (cut strips)
50g Chives (cut to 4 cm long)
50g Spring Onion (cut into 4 cm long)
30g Dry shrimps (soaked and mashed)
1 stalk Lemongrass (mashed)
2 tbsp (75g) Homemade Chili paste**
10 Kafir leaf (each leaf cut into 4)
5 nos Calamansi
2 nos Eggs
1 nos Red Chili (cut slice)
Salt and Sugar for seasoning
50 ml Cooking Oil
