Ingredients:
1 kg quality potatoes
2 large spoon-fulls rendered duck fat
6-8 garlic cloves
3-4 stems fresh thyme - leaves only
2-3 stems fresh rosemary - leaves only

Method:
1. Wash the potatoes and cut up into segments lengthwise. Put in cold water and let rest for a few minutes to wash out excess starch.
2. Place potatoes into a pot with cold water, bring it to a boil and simmer on low heat till the potatoes are almost cooked-thru. When water begins to boil season lightly with salt.
3. Strain and let moisture evaporate.
4. Melt the fat in a large pan or wok on high heat, add the garlic and quickly fry to let the fat absorb the aroma. Take garlic out of the pan, set aside.
5. Lower the heat a bit. Carefully add the potatoes to the pan and let fry for some time till golden. Carefully turn over and fry till golden on all sides. Season to taste.
6. When the potatoes are just about done and crisp on the outside add the garlic and herbs to the wok, mix well and let fry together for about 2 minutes more.
The secret to proper fried potatoes is to wash off excess starch before cooking, to pre-cook the potatoes evenly in boiling water and to form a beautiful golden and crunchy crust by frying in very hot fat. No more mushy or undercooked potatoes! Yes we can!
