“Bimal has to go to Japan for a week to shoot a film, so he has been busy this week preparing the necessary things. The food there is not to his liking, so the biggest problem for Bimal is what to eat when he goes. Bimal always says that when he went to Japan last time, he managed to survive hunger because of the fried soya meat made by my mother. But these days, my mom has also gone to the village. That's why I thought I should ask my mom how to make fried soya meat, then cook it the same way and give it to Bimal when he goes. So, I called my mother and asked for the recipe. That's when I realized that this can be made very easily.
First, I put one packet of soya meat in a pot and added enough boiling water to cover it. After that, I added some table salt, covered it with a lid, and steamed it for about 7-8 minutes. In the meantime, I cut two large onions into thin slices and peeled two or three curry leaves. Then, I cut the ginger and garlic, put them in a stone mortar, and ground them well before setting them aside. After that, I squeezed the soya meat thoroughly to remove all the water, put it in another bowl, and added the crushed ginger-garlic mixture, salt, chili powder, wheat flour, and an egg. I mixed everything by hand until the soya meat was well coated.
Next, I put a pan of oil on the stove and first fried the curry leaves and sliced onions separately until they turned golden. They were carefully fried separately because if curry leaves and sliced onions are over-fried, they will taste burnt. After that, I deep-fried the soya meat until it turned golden brown.
Once again, I put a drop of oil in a saucepan, and when it was hot, I reduced the heat and added chili flakes, fried soya meat, fried onions, and curry leaves to it, then slightly heated it. Umm, the smell... I put a piece in my mouth and tasted it. I added a pinch of salt and mixed everything well. Bimal is right! This is very tasty... even without meat or fish, you can have a feast with this. After letting it rest for a while, I put the soya meat mixture in a tightly closed glass bottle and kept it ready for him. I felt very happy because now he won't be hungry!
With love, Sujani!” ❤️
