While most American grocery stores will have staples like jalapenos, habaneros, poblanos, and serranos, Hatch green chiles are very rare and hard to get outside of New Mexico. It's sad, because their flavor is unique and they are easily the best for this type of thing.

That's the problem with watching food content from other countries, getting the ingredients. I can get most but not all American stuff where I am but I am really struggling with getting Asian ingredients. Look on the bright side though: we all have ingredients unique to our locations. I'm sure plenty of people want artisanal Belgian beers for example. Now, can I interest someone in fermented herring? 😭

One thing I love doing w/ charro beans or any dishes that are enhanced by the flavors of cilantro: add whole cilantro stems when simmering, as you would a bay leaf, and removing. Can always add fresh leaves to finish.

Its crazy to me how I have never once seen an english video about cooking beans that mentions using a pressure cooker, over here in brazil they are very common and the cooking time comes down to about 40 mins if the beans have been soaked, seriously, you can make beans and other delicious stews so much faster ! My lazy person’s version of this dish, which is a winter favorite: Goya canned pinto beans added to a skillet sauté of vidalia onions, 4 oz pancetta, sun dried tomatoes and a can of original RoTel. Ready in about 30 minutes, serve over rice.

maybe keep some cherry tomatoes on hand so you can smash them and "freshen up" the canned tomatoes (peel by making a tea kettle of hot water and pouring it over them, just like Kenji torching them for the heat)

oh. I've been making a recipe almost exactly like this for the last 10 years except I use black beans and don't use tomatoes, then I serve it with fresh white rice. I also add a good amount of homemade chili powder (cumin, dried guajillo, pasilla, ancho, chipotle, garlic powder and dried oregano)

Wow, wow, wow. These are the most delicious pinto beans I have ever tasted or made! Going in to the regular rotation for sure. I did the "reverse" version, making the flavor base, then adding the beans. I used thick cut bacon, canned fire roasted tomatoes, oven roasted my own peppers (no hatch here in CA, so one Poblano + 2 Anaheim), and a bit more garlic than Kenji used. It's almost like a pinto version of Chili. Originally made it as a side for chicken tacos, but I'll absolutely be eating it on it's own as well. Great with a handful of corn chips on top!

This is great. In good Tex-Mex restaurants, you get a choice between refried beans or charro beans with your combination plate. I always get the charros. Some of them put in some tomato, some don't or at least very little. None of them, I think, make it with such care, and there's not as much salt pork or bacon in it. (There used to be a band in Austin called "Los #2 Dinners" -- honestly.)

Great video and nice to see you back. This is a go to staple in the house and so versatile. My favorite being sautéing smoked sausages and then adding beans after. Also, puréing a bit of the beans with left over coffee from the morning! 10/10 recommend.

Very similar with the way we cook beans in Brazil, everyday. Except we don’t use chiles and tomatoes (although some few people use tomatoes). Goes well with some ginger also. And we always eat it with rice
