I asked my grand daughter what I could get her for graduation. She asked me for an empty cook book so she can come over and duplicate my personal cook book that I started in the early 70's. They are recipes that I love ALL OF THEM.

Butternut squash soup is one of my favorites. I've had success with cubing all the squash to uniform sizes and roasting on parchment instead of just the pan. It keeps them from burning or charring too much. Another tip I learned was to do all the coating of what you're roasting in a bowl first for more uniform coverage. Coating on the pan doesn't always get uniform coverage. I guess my word of the day is uniform. 😂 At the risk of being a pest, is it ok to ask for some different music? Perhaps varied in the video? That tune is getting kinda🤯.

How about adding some ginger? Is your ginger crop ready?
For the butternut soup you may want to add a touch of heat. I add a drizzle of chili oil and top with pepitas. The butternut and sugar will make the soup very sweet so you need to balance the flavors.

Ok, I'm convinced you are a very shy person and that is why you laugh at times that there is nothing to laugh at. You are such a BEAUTIFUL woman Jill. It was a joy watching your little girl helping you. You were easier to watch without the nervous giggles. I think I spot that in you because I USED to do it all the time. My grandpa used to mock me....teee heee heee. I was teased at work for being "so happy" and that was un-natural. I felt like I was in the kitchen with you today. Anyway....Love your channel and love your content.

Our soup recipe is… Butternuts halved, seeds scooped out. Drizzle with oil, crack of s&p sprinkled with fresh thyme. Bake till soft. In large pot sauté sliced leek with 30gm butter, 1 tsp curry powder. Scoop flesh of pumpkin (you call it squash I call it pumpkin) into pot, top up with chicken stock until desired consistency. Blend with immersion blender. Serve with a dollop of cream and sprinkle of nutmeg or chopped crispy bacon. 😊

Also after roasting your squash, sautee onion, garlic, crushed ground pepper, turmeric, salt, chili pepper , nutmeg, cinnamon. . Place squash in a large pot with homemade veggie broth and all the sauteed seasonings. Using your hand blender add some cream. Let it cook together . for a half hour. Taste test. Great with the homemade sourdough. This is one of my favorite soups for winter. Enjoy!!!!

We love butternut squash soup which I've made a few times and I've substituted it in place of pumpkin in muffins and pumpkin bread. our favorite way to eat it is cut in chunks and roasted with a little olive oil, Rosemary and just a bit of brown sugar. we also love it roasted with red potatoes also adding a little Rosemary on that.
