I made your bun/recipe this morning into a loaf and it turned out fabulous. My husband made a ham sandwich and I had my favourite egg salad sandwich. The bread was light and fluffy. I did add allulose for the the browning. Dee-lish! Oh, and after grating the butter with my regular grater, I ordered your grater. I like my fingers too much! Thanks Anita for all that you do. 😊

I have the same red grater and I LOVE IT! A whiz grating cheese and butter! I also have a red kitchenAid mixer. Love red in my kitchen. I like the ease of your bread recipes but I haven’t been able to afford the egg white powder yet. I have most everything else so maybe I can spring for it in January! I’m trying to save to buy all new kitchen appliances. That’s at the top of my to do list at the moment.🥰🥰🥰. Thanks for all of the things you share with us. Hi Anita. Sorry I'm a couple weeks in arrears. I have this same grater - love it! The slicer drum is great for doing firm pepperoni and sausage rolls for pizza or meat "chips" for the oven. It's not so good for the softer ham rolls. I never thought of using this for pork rinds. An adventure in the making ...

The grater attachment is metal and I’m thinking a short stint in the freezer prior to using on the butter would help keep the butter even colder as you prep it😁

I have one of those rotary graters, too! I bought it specifically for shredding frozen butter, too. (How ironic, is that?) Great minds, I guess. 😆 I LOVE the idea of using it for pork rinds. I've made pork panko in my food processor, but cleaning up afterward is no fun at all. I'll be making up a lot of pork panko this weekend.

The guar gum does help a little (or any gum that you have like arrowroot, locust, etc). But overall the BBBE buns don't shrink as much or as fast as the PSMF buns I find.

I only use beef gelatin. Maybe I've missed and may I ask 'why' you add beef bone broth to your bread? What is the advantage of adding it? I DO have it, before we all learned about using gelatin I did use it, but after using the gelatin I quit using the beef bone broth powder. Should I add it back IN? Would it make better bread for me? I LOVE this bread! I am making sacrifices in other areas and not purchasing other things so I CAN continue to purchase the egg white powder! It's VERY worth it to me! I eat at least one slice of this bread a day! I LOVE the Redmond's Organic Season Salt on top of it! So that brings me back to my question - IF you get the chance to answer? Thank you dearly!!!

Well back when we were all making the dry styrofoam bread I was trying to up the protein in it so I added bone broth powder to replace some of the egg white powder., and quite by accident found that it made the dry PSMF bread soft and fluffy! After more experimenting I found that beef gelatin and collagen did the same. So that is why I offered up all the substitutions! I feel like the BBP gives an extra flavor dimension so I continue to use it and also I have a large can of it! If you are making it work with gelatin I don't think it's worth the extra expense to buy the bone broth powder.

@@KetogenicWoman Thank YOU soooo much for explaining that! It helps! Still, it CAN HELP to lessen the amount of egg white powder we use as long as the cost of the bone broth powder isn't the same! Lol!!! I also use the same brand, Now. I like it! I have 2-1/2 canisters of it because I am finding I don't use it much because I make one ground chuck roast weekly in the Instant Pot - delish!!! I save the liquid from that and reuse it constantly! I've also made other roasts and used that same liquid!! It works GREAT and really flavors the roasts terrifically! Better than plain water or even the BBP! I wonder if we can substitute the BBP one for one to the egg white powder? Hmmm? Experimentation time! Do you substitute BBP one-for-one with egg white powder? I am curious?

I do place a rack under my mesh pan I think it helps makes the bottom crust a little firmer. Also I found the buns without the frozen butter stick way more than the ones with.

Anita, where do you get your pork rinds or pork rind crumbs these days? I used to get the tub of rinds at Costco but it seems that they've discontinued it. They do have the Old Dutch ones here, would you say that that's the way to go?

I am curious. I have a freeze dryer and make my own egg white powder. I wonder, would this be a good substitute for the egg white powder you are using in this recipe? I make my own freeze dryed bone broth too. I am a bit nervous to give it a try. I hate to waste good food but I am reluctant to purchase products that I can make here at home.

The only way to know if it would work is to see if your freeze dried egg white powder can be whipped up into stiff peaks. Definitely it would be a cheaper way to go!

These BBBE buns do not deflate the way PSMF buns do. They will deflate a little as the days go by but not much.

@@sharvo6 Interesting idea! That pan is actually a 12 bun pan that I cut in half with scissors! I bet you could make it fit by cutting it into smaller pieces with less border space inbetween! I did that with a silicone muffin pan, I cut off all the borders to make it fit!

I store mine in the fridge after the first day. I mostly toast them if thin enough. These hot dog buns are too thick for the toaster so they can be done in the airfryer or could be baked on a tray in the oven for a few minutes. I also use them cold for sandwiches, like a roast beef sandwich.
