@@EverettBBQ yeah man I would be too, I do a pork butt every other week, now I'm going to be making a bunch of sausages, Keep rockin the great content brother, and I hope your videos don't turn into commercial vision like so many I watch that are pushing 3,4 or 5 products per video. I just watched one of my faves and he was pushing 3 products in his vid. Just made it so fake.

Oooh this looks great, think I need to find some pork butt now! Out of interest, do you find the chunks of wood you put in the catch bucket actually burn? I tried this on my MB but they didnt do anything, I've seen people use some metal mesh to hold it up towards the lit coals so was thinking of trying that. Though for now I've been mixing wood chunks in with the coal.

Thanks so much freeboski! Mine definitely catch in the ash pan but not all of them burn out completely. They still smoke well though. I think both ways work for certain but to me with the hopper liner being so sensitive, I try to use briquettes only for most of my cooks without any wood chunks for the life of the hopper part of the cooker. I really want to buy that LS modification. They make a steel hopper liner that fits in there. Anywho, thanks for putting up with this experiment. Cheers! 👊

Do you go from wrap straight to rest or do they cook with the wrap? So my understanding is you did a 5 hour cook and then a 2 hour wrap n rest? I failing to see the whole post wrap situation. Help me out bruddah! Maiden butt voyage next weekend! Thanks bud

Wut up Takulus! Yup, for this video I smoked them for five hours in the gravity series. Then wrapped them and cooked an additional two hours until they temped in the 203 range. I then let them cool down for about thirty minutes outside of the cooker and then just threw all three butts in the cooler for 90 minutes. If this is your maiden voyage, my biggest tip would be to rest the pork butt at least 90 minutes. I honestly have begun to hold pork butts and briskets in my oven after the meat cools down to the 180s. I then turn my oven on to 170 degrees (as low as it will go) and keep the butt or brisket in there for another 3-5 hours or more. It helps the rest of the collagen to render out and turn into jelly in my opinion. The first time I tried it, I thought I would over cook the thing but it turns out they really need that extra time to get nice and tender. What I am looking for before I wrap is a nice bark and some quality fat render, that's why I like to cook pork butts fat cap up. Once I see the cap start to split on a pork butt, I know it about time for the "wrap nap". I am excited for you! Best of luck to you, sir! 👍🍻🐖🔥

@@EverettBBQ another question if I may be so bold I'm also making sum booty for my daughter first communion in 2 weeks Hence the trial run Point is....I'm gonna be up all night that Friday night into Saturday morning to get it done Ok...I'll get to it It'll be OK it I pull it off about 9 in the morning till we get home at around noon? Can I wrap it in towels and put it in a cooler that long? Not sure I feel safe leaving the oven on till I get home? You're my #1 go to for this And I watch A LOT of bbq vids Your opinion is money to me Thanks for responding

I decided to go with basic BBQ rub and AP. It was easier to take out the sugar and salt with Pork Butt B that way. Thanks for checking out this collab it was a long time coming. Best TCD! 😎
