Ingredients:
1 cup raw cashews
1 cup raw almonds
1/2 cup pumpkin seeds
1 tablespoon vegetable oil, plus more for greasing
1/2 cup quick oates
1/4 teaspoon salt
1/2 teaspoon dry mix spice
1 1/2 Tablespoons cinnamon
1 cup puffed brown rice
1/2 cup craisins
1/2 cup dates (about 5 dates), pitted and finely chopped
1/4 cup green raisins
1 tablespoon flax meal
1 tablespoon toasted sesame seeds
1/4 cup maple syrup
1/4 cup honey
1/2 teaspoon lemon juice
Instructions:
1. Preheat oven to 325°F. Combine cashews, almonds, pumpkin seeds, oil, dry mixed spices powder, cinnamon powder, salt in a medium bowl; stir to coat.
2. Grease a 9-inch square baking pan with vegetable oil, and line with parchment paper, leaving a 1-inch overhang on 2 sides. Toss together toasted nuts, puffed rice, craisins, dates, flax meal, and sesame seeds in a medium bowl. Add maple syrup, and honey, and stir to coat. Transfer to prepared pan, and bake at 325°F until toasted and starting to set, 15 to 15 minutes.
3. At the 15 minute mark, add 1/2 teaspoon lemon juice, craisins, raisins, and dates and toss the mixture. Spread it out on the same baking sheet and bake for an additional 5 - 10 minutes or until mixtre sets. Then pre-score the bars before it cools.
4. Transfer pan to a wire rack; let cool 20 minutes. Remove mixture from pan, and discard parchment; let cool completely. Using an oiled knife, cut into 12 bars. Individually wrap with parchment paper, and store in an airtight container.
