Here's a tasty, healthy, spicy, and 100% vegetarian dish! Fry Baigan, Aloo and Tomatoes is one of my comfort foods. Here is what you'll need.
1 large Baigan (eggplant) or 2 medium
4-6 potatoes/aloo
4-5 tomatoes
10 cloves of garlic
1 hot pepper
1 onion
a few leaves of bandhania/culantro/recao, chopped
salt
oil
Serve with Sada Roti!
