I’m not a magician!

Chicken and Zucchini Pizza
For the pizza, I strongly recommend you find wraps like the “Protein Up” ones I use. At 130 calls and 10g of protein they are so versatile and really fantastic.
Use whichever veggies you like and I used 30g of shredded pizza mozzarella
I used the Italian seasoned chopped tomatoes as a base instead of prepared spaghetti sauce or pizza sauce.
Recipe for Curried Shrimp & Cauliflower Rice
350g cauliflower rice (I used frozen but you can process your own)
150g raw shrimp
1/2 onion
1-2 chopped garlic cloves
100g chopped peppers
250ml puréed tomatoes (I used the seasoned ones and processed them)
50g chopped zucchini
1 1/2 tsp curry powder
1/2 tsp ground cumin
1/4 tsp ground turmeric (optional)
1/4 tsp cayenne (optional)
S&P
Chopped parsley & lemon zest for garnish if desired
Sauté onions, garlic and peppers in a bit of water. Keep adding water as necessary so your pan doesn’t dry out. When soft, add the zucchini and the tomatoes. Stir in your spices.
Add the raw shrimp and allow to bubble until the shrimp turn from gray to pink.
Heat you cauliflower rice and arrange in a low bowl. Grate in some lemon zest and sprinkle with parsley. Add the shrimp around the rice and dig in!
