It is more and more enjoyable to invite my loved ones and set a raki table at home, often the feeling is different from the outside. In the easiest way, I wanted to explain how to set up a raki table at home and how to host people. I am sharing the recipe for the 5 appetizers in the video below!
Carrot Tarator:
Grate the carrots with the robot if your robot has a grater blade, or with a regular grater if not. Pour enough olive oil to cover the bottom of your pan. Cut 2 large cloves of garlic into 4 parts and cook together with the carrots. Continue cooking the carrots and garlic until they are tender and change colour.
Remove the garlic and let the carrots cool. After it cools down, add salt, strained yogurt and mayonnaise to your taste. If you want, you can put walnuts inside or decorate with walnuts.
Grant:
1 cup of tahini
2 cloves of garlic
1 lemon (do not miss the seeds)
1 full teaspoon of salt
1 tablespoon of cumin
1 tablespoon of ground pepper
Throw them all in the mixer. Slowly add boiling water until this thick and dense mixture reaches the consistency of hummus. (about 1 teaspoon)
Jackal Piyaz:
1 can of boiled white beans (can also be made with kidney beans if you want)
3 tablespoons of tahini
2 spoons of strained yogurt
little olive oil
salt
half a lemon
Onion, depigmented, finely chopped, 70% of beans
Sumac
Shuffle the list above.
Haydari:
Melt 1.5 tablespoons of butter on low heat and put 2 garlic cloves, cut into 2 parts, in it. Put 1 tablespoon of mint and remove from the fire before the mints turn black. Cool this oil a little and pour it into the strained yogurt. Remove large pieces of garlic and mix.
Albanian Liver:
Dip your livers, which your butcher has carefully cleaned and cut into large cubes, in flour with 1 teaspoon of baking soda. Sift the floury livers and cook them in hot oil without drying them too much.
After the liver is cooked, mix it with salt, ground pepper, paprika with a paper towel laid on the bottom and serve.
