Made this for my baby boy’s 2nd anniversary, super delicious! I added a sprinkle of coconut flour to the cake batter as the carrots were really juicy and I did not have much time to have them rest in the fridge. I also added some lemon zest and did the icing with tangerine juice instead (it’s not orange season here right now). Fabulous! Thank you Kristina.

The Domestic Desi No waste of money in ANY of this. They are delicious. Keep them refrigerated to make them last. You will need a blender for the icing. For a standard blender, SOAK the dates in liquid to soften them so they dont break your blender.

I have recently started with the raw lifestyle and I must admit this was my first raw desert to attempt. Come to conclusion I was not disappointed one bit matter of fact I was pleased beyond belief. Kristina wasn't lying when she said these are extremely similar to the un-raw carrot cake and the frosting ended up making more than expected and makes a great spread! 5 stars no doubt. All Cashews in the US and Canada are not raw. If you were to eat raw cashews they would burn your mouth, I know because I live where they grow in Peru and eating raw cashews is like eating hardened battery acid, the acid in cashews is so strong it will burn your mouth and lips I had a scar that took weeks to heal from that mistake, it makes you wonder whether they should even be eaten at all.

I love roasted cashews but I guess I have to rethink that. I really wonder if they're safe to eat even after roasting. Thanks for the info ProPaleo. Definitely food for thought.

Qwazier3 You're welcome. Roasted macadamian nuts are similar in taste to cashews and they're actually healthy to eat raw and even roasted as they are much more heat stable than cashews due to their high saturated fat content.

These are so delicious that I keep coming back to this video year after year. We are not fully raw and we don't own a food processor, but where there is a will there is a way, and you don't have to be a following a strictly fully raw life-style to enjoy these delicious and healthy recipes. Thaddeus Sheehan It still doesn't mean you can't get raw ones. To have a blanket statement "Cashews are not raw" is completely false. The only nuts that require pasteurization by the USDA are Almonds. Can you provide proof of your statement that ALL nuts must be heat treated?

it has nothing to do with pasteurization. To get cashews out of the shell they have to be heated.....sorry the easiest way for the processor to get the cashew out of the shell is a heat process look it up. Not all nuts have to be heated I never said that but cashews are heat treated. ;) It is all about the manufacturing process, nothing to do with regulations, laws or government decrees. Cashews grow on a fruit, it is apparently quiet tasty, but does not ship well. KZitem is full of lots of wonderful information.

These did not turn out like I expected. Consistency was awful! Perhaps I am just not used to eating raw cupcakes. Not for me! VERY expensive to make too!

I just threw 6 cuties, 5 pitted dates, and 2 cups of raw, soaked cashews into my Oster Fusion blender and BAM!!!! AWESOME, SWEET, icing.... No problems what so ever. Thanks Kristina.

You can heat food under 114 degrees F and it's still technically raw because past that temperature you are destroying vital enzymes and nutrients

For the past few months I've been eating really healthy, but last weekend something happened, I was at a wedding and I ate a lot, like a lot... Since then every day I've been eating non stop, All I've been eating is white bread, chocolate... And feeling really crapy for it. you're such an inspiration! ..Im not fully raw....yet! Im sure it will take some time to transition but already about 80% of my diet is raw fruits and veggies wich is great considering that not that long ago that percentage was probably less than 10%. watching your vids has gotten me even more excited about eating more raw and tons of new and creative ideas on how to do it. I have been following you since a while but this is the first time I comment on your channel. I absolutely had to, because this is the first raw dessert I have ever made and I wanted to thank you! I made it today for my birthday too and they are absolutely delicious!!! I have no vitamix and no food processor, only a terrible mixer... but they turned out anyway very good. not so creamy and perfect like yours but does not matter. thanks again, I cannot wait to try other recipes from you! Thanks for sharing Kristina. I just made this recipe and was very sweey and tasty. Loved the mix of all the flavors...mainly the ginger and cinammon. Yummy goodnes! I added lime and cinammon to the frosting and then put it in the freezer for a little bit. It tastes amazing but im not sure if its thick enough. I will definately make it again.
