8oz cream cheese (= half packet Philadelphia): lightly warm it up then mix till smooth. Egg yolk x 2: Add to cream cheese and mix. Cake flour 20g = 2 tablespoons, tightly packed: Shift and add to above to mix, then strain for smoother texture. Egg white x 2 + sugar (5 tablespoons): Whip till soft peaks (avoid stiff peaks, or the cake will cracks) =meringue Add some meringue to the yolk mix, and mix well, then put this mixture back to the meringue. Carefully mix 405F for 20 min, then turn down temp to 285F, and continue baking for 40 more min. (In the video, using a thick-bottomed container to protect the bottom from heating too much, as it’d crack the top) When done, best to open the oven lid gradually to so the cake won’t collapse on sudden, cold air. (I doubled this recipe and made 2 cakes at a time, cuz Philadelphia cream cheese comes in 8-oz packet.) Hope you’ll make one/two!
