Gato Francis or Carré Rouge is a Mauritian dessert made from butter cake with a glaze made from red syrup flavoured with strawberries, sprinkled with coconut and topped with buttercream!

Ingredients:
SPONGE CAKE
300 g Flour
2 1/2 TSP Baking powder
1/2 TSP Salt
227g Unsalted Butter (soften)(1 cup ) (Note 1)
1 Cup Sugar (granulated)
1 TPS Pure Vanilla extract
4 Large Eggs at room temperature
3/4 Cup whole Milk
ICING
2 Cup Granulated Sugar
1 Cup Water
Pinch of Red Food Colouring
3 - 4 TBSP Strawberry Jam
COATING
2 - 3 Cups Desiccated Coconut
BUTTERCREAM
65 g Unsalted butter
150 g Icing Sugar.
1 -2 TBSP Whole Milk
1/4 TSP Vanilla extract
Note:
1. In this video we are using Becel brand butter sticks (plant base oils), mainly for baking. This butter is already soft. (This product is for Canada)
How to Bring Butter to Room Temperature?
Sit out: Allow the butter to sit out on the counter for about 1-2 hours before beginning your recipe. The amount of time depends on the weather and how cool you keep your kitchen.
Test it: To test the butter, poke it with your finger. Your finger should make an indent without sinking or sliding down into the butter. The butter should not be shiny or greasy. It will be cool to touch, not warm.
