Gai Choy (芥菜) also known as (aka) Mustard Green. It is good for making vegetable soup. The Gai Choy is harder comparing to Tong Ho vegetable; it needs to cook a little longer to make it soft that is nice to eat. How soft it is that is personal preference. In general, you should not make it too soft, don't over cooking it. The marinated pork makes the soup more tasty. However, you can use marinated chicken meat if you prefer; or don't use meat at all, just pure vegetable soup.
