The Uruguayan galleta, or as it is pronounced, the Uruguayan gajeta, is a puff pastry bread with a rustic flavor and appearance. Very common in cities bordering Uruguay, and some other cities in Rio Grande do Sul, it is not well known in Brazil's restaurant.
I brought this recipe to the channel, as I found very little about it in Portuguese.
Dough Ingredients:
1kg of wheat flour;
20g of sugar;
20g of salt;
20g of flour enhancer;
10g of fresh biological yeast;
50g of lard;
2 eggs;
400ml of water.
Pasta ingredients:
75g of corn starch;
75 of lard.
