How to cook Balbacua
Paano magluto ng balbacua
The dish origins are in Visayas and Mindanao. The original ingredients of the recipe is beef skin with or without oxtail. But it can also be prepared with Carabao skin or Horse skin. The term " Balbacua " comes from the Spanish word " Barbacoa " meaning to slowly cook the meat over an open fire until it becomes tender.
Ingredients:
1/2 kilo Beef skin ( balat ng baka )
2 liters of water
Sibot
2 pcs onion medium sized
2 thumb size Ginger
7 cloves garlic
Lemon grass ( tanglad )
1 tbsp whole black pepper
3/4 tbsp Atzuete powder
Salt and pepper to taste
2 tbsp fish sauce
1 cup of hot water
seasoning
1 pc bell pepper
Red and Green Chili
Onion leaks
