I would seriously appreciate if there was garlic and parm flavored codeine. I hate the taste of that stuff and I can hardly get down the required dosage at appropriate times. On the other hand if it tasted good I might have a chance to get addicted which is not going to happen with stuff that I barely can get down even when in serious trouble from coughing.

WOW!! I made these today and they are absolutely AMAAAZING! Possibly the best wings I've had so far. I have a low tolerance for really spicy foods but these had just the right amount of kick to them. I wasn't able to turn the garlic into paste. Just minced them as fine as I could and had buttermilk ranch instead of creamy italian dressing but the wings were still amazingly delicious! Thanks alot for this recipe!

Hi Chef John, Just wanted to let you know that you're right!... at least halfway. The reason the chicken wings start to float is in fact due to a change in buoyancy, so good on you there. The reason this happens is because raw chicken wings are similar in composition to our fleshy human bodies, which owe most of their heft to water weight and bone (and too much good food) - more dense overall than water. Water is driven off as the wings cook, and this in combination with a slight increase in meaty volume leads to a decrease in total density such that the wings end up floating in water. I know that you've been waiting anxiously the last six years for this response, you're welcome. Also, love the channel and your work. Truly as fantastic as the recipes, which is hard to believe.

If it was bland you might want to up the salt concentration in the water, it seems to be the key seasoning for the recipe. You could also try a saltier parm and hope that seasons everything better, and I'd probably add more heat than he does because I just really like hot stuff, but YMMV.
