Sometimes when you've been out roistering, hunting, debauching and otherwise catting about all night, and you're just about ready to head back home and yowl until your people wake up and open the back door all grumpy for you, a nice bit of fresh chicken broth is just the nightcap required to keep you going until dawn.
Where does the broth come from? Rich with pure chicken flavor and a nice layer of schmaltz on top, we make it? We boil the extremely inexpensive, tough, sometimes still feathery chicken thighs we put out. The boiling liquid gels upon cooling and when put in the bowl is enjoyed by at least the Opossums and the Cat. Why boil the chicken? We tested raw versus cooked on the Critters and determined they prefer cooked chicken. We also debone the pieces, which not only keeps the Critters from getting bone splinters in their throats but also allows us to spread the broken up chicken pieces from the tree branches to the fenceline and in different plates all over the patio. So Cat may look like a rebuilt, salvage 1994 Crown Vic made from three wrecks, but he has good taste, at least, and is welcome to enjoy a bit of fresh and refreshing broth. Especially since all the other Critters had their chance at it earlier in the evening. Or morning, since it is 4am.
