Ingredients:
1 medium seabass (cleaned)
pinch salt and black pepper
50 g ginger (julienned, divided)
50 g coriander (chopped, divided)
50 g spring onions (sliced into 3 inch)
2 tbsp. peanut oil
4 gloves garlic (minced)
1 tbsp. sugar (red)
1 tsp. soy sauce
1/2 tsp. chicken powder (optional)
5 pcs. dried chili
1/4 tsp. salt
1/4 tsp. black pepper
Cooking Procedures:
1. Place the seabass in a plate and season with salt and black pepper.
2. Stuff half of spring onions, fresh coriander and ginger into the body of the seabass. Remaining ingredients for stuffing to be set aside.
3. Open the stove on medium low heat, place the steamer and boil water.
4. When the water is boiled in the steamer, place the plate with seabass and steam for 8-10 minutes. Remove the seabass from
the steamer.
5. Heat the sauce pan on medium low heat and pour in peanut oil.
6. Add garlic and saute until aromatic, followed by sugar, soy sauce, chicken powder, dried chili, salt and black pepper. Stir for 1 minute.
7. Turn off the stove, pour in the sauce at the seabass.
8. Serve with garlic fried rice and enjoy.
